Raw Apple Pie Pudding
Apple "Filling":
1/2 cup apple, peeled and chopped
1 tablespoon ground chia seeds
1/2 teaspoon lemon juice
1 teaspoon maple syrup/agave
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon water, to thin
3 medjool dates, soaked
1/2 apple, chopped (left whole in whole pieces) "Crust":
1/2 cup soaked cashews
3 medjool dates, soaked
2 tablespoons unsweetened shredded coconut
2 teaspoons maple syrup
2 tablespoons water/nondairy milk (I use almond milk)
1/2 teaspoon cinnamon
pinch salt
Topping:
walnuts, to taste
seeds of choice, to taste
1. Puree apple filling ingredients, except second 1/2 cup chopped apple, in a food processor or hand blender. If you are making only 1 serving, a hand blender might work better. Stir in whole apple pieces. Set aside.
2. Puree all crust ingredients in a food processor until smooth. Spread on top of apple filling.
3. Sprinkle with walnuts and seeds. Let sit in the fridge overnight or for several hours.
