Rick's Casserole

What you need: 

1 package soy crumble (plain)
1 jar spaghetti sauce (your favorite kind)
1 12-16 oz package of noodles ( I use something fun looking)
vegan tofu sour cream
vegan soy mozzarella cheeze

What you do: 

This is one of the easiest recipes you will ever prepare. I took my grandmas recipe and modified it to be vegan. This was one of my favorites growing up and now it will be one of my kids favorites. Enjoy!
Cook noodles by manufactures instructions. Heat up soy crumble. Mix in spaghetti sauce once crumble is heated. Drain noodles and place in casserole dish. Mix in sauce mixture. Drop in about 4-6 spoonfuls of sour cream. Mix up until it looks creamy. Top with cheeze and foil then bake at 375F for approx. 30 mins. I remove foil and bake until cheeze is bubbly.

SO HOW'D IT GO?

This was really hearty and delicious. I used a can of sanitarium nutmeat, about 3/4 container of tofutti cream cheese, organic bolognese sauce and homemade cheese on the top. I also subbed shells for the noodles. Yumm!

this was delightful!  i used medium shells which worked just fine, i didn't have any pasta sauce so i used a large can of diced tomatoes and added quite a few spices (oregano, parsley, garlic powder, minced onion, & black pepper).  i added mushrooms on top just before the "cheese."  i had some chicago soy dairy mozzarella in the fridge so i used that, it doesn't melt super well, but the taste is great. 

thanks for the great recipe, as i've written this and taken a picture my fiance has come back for seconds AND thirds!

I have always LOVED sour cream on my spaghetti, but somehow adding cheeze, baking it, and calling it casserole makes it seem less weird.  And YUMM!  So simple, and yet so satisfying.  Thanx for the idea, and for opening people's minds to the deliciousness of (vegan) sour cream and s'getti!

this is great. I didn't have much in the pantry and was looking for an exciting idea. I used two boxes of  Quinoa macaroni noodles and soy crumbles sauteed with a few tablespoons of chopped onion and a sprinkle of powdered garlic in olive oil. I didn't have any vegan sour cream so I used a couple dollops of Vegenaise. I also didn't have cheese on hand so I didn't even bother sticking it in the oven. even without the cheese, this is great and so easy! Kids will love it.

Such a foolproof recipe! Definitely needs some veggies, so I added finely chopped onions and mushrooms to the soy crumbles when I heated them. I also chopped some spinach, and mixed that in right before putting it in the oven. The mozzarella definitely made this meal, shoulda used more.  I also added 2 cloves of garlic. I bet some breadcrumbs or some other cruncy somethingorother would be great on top. Mmmm, my first casserole!

Thanks.  I've tried follow your heart mozzarella on a seitan sandwich and put it under the broiler and everything, and nothing worked.  Weird.  : )

Maybe I'm doing something really wrong, but I cannot get the cheese to melt.  Not just on this casserole, but on anything.  What could I be doing wrong? 

Some vegan cheese just doesn't melt-follow your heart melts.  Also, I've made the soft soya cheese substitute that's here on veg web or the not so queso sauce w/o the ro-tel.  Just stir either in. They both work great.

It's in the oven.
I didnt have any veggie groud beef so i shoved a bunch of veggies in it.
I hope it turns out. 15 minutes left.

Holy yum!  I just made this puppy, and it was a total winner winner (unchicken) dinner!!!  I used wheat penne, and although I didn't have soy crumbles, I just tossed in chickpeas.  I also added sauteed onion & garlic, and a package of cooked/drained spinach.  It's freaking Fantastic!  The 'sour cream' really makes it, and the combination of veggies 'n beans that could be added are endless.  I used another post's suggestion on brand of vegan mozz, and I can't keep my fork outta' the dish!  Thanks for the recipe, Rick!!!
