Rockin' Salad

What you need: 

[u]Salad[/u]
1 (2-ounce or 50-gram) slice firm, herbed tofu
2 cups mixed greens (rocket, arugula, lamb's lettuce, lollo rosso, etc.)
1/2 cup mixed salted nuts (hazel, peanuts, sunflower seeds, what have you)
1/2 cup mixed frozen red fruit (currants, raspberries, blackberries etc), thawed
raisins, to taste
6 cherry tomatoes, halved [u]Dressing[/u]:
2 tablespoons olive oil
1 1ablespoon balsamic vinegar
1 teaspoon agave nectar
salt, to taste
pepper, to taste

What you do: 

1. Grill or fry the slice of herbed tofu until just brown on each side.
2. Place greens in salad bowl. Top with nuts, red fruit, a few raisins, and cherry tomato halves. Place tofu slice on top of salad.
3. In a bowl, whisk together all dressing ingredients; check seasoning.
4. Pour dressing over salad.
Source of recipe: This is my vegan version of a salad I was given in a local restaurant. The salty nuts and sweet fruits made me think of Christmas.
