Rosemary Chicken

What you need: 

1 lb. package of chicken-style seitan, drained
6 tablespoon soy margarine
2 tablespoon olive oil
2 teaspoon dried rosemary leaves, crushed
1 teaspoon dried thyme
1/2 teaspoon dried sage
3 cloves garlic, finely chopped

What you do: 

Grease a 9 X 13 pan with 1 tbsp olive oil. Preheat oven to 350. Arrange the seitan pieces in the bottom of the dish.
In a small saucepan, heat remaining olive oil and add margarine to melt. Once melted, add the garlic, rosemary, sage and thyme. Allow to simmer for a few minutes.
Pour the melted magarine mixture over the seitan pieces and bake for 20 minutes, turning once.

SO HOW'D IT GO?

i made this for dinner last night, SO DELICIOUS! i used fresh rosemary and thyme, and morningstar farm chicken strips instead of seitan, and it turned out fantastic. even my non vegan husband liked it =)

I'm a single mom and I don't have much time. I just made this the easy way: I used a bag of Morningstar Farms chik-un strips. All I did was heat up some olive oil and butter. While that was heating, I picked some rosemary from the garden. (rosemary grows in the ground without you paying any bit of attention to it after you plant it) I chopped the rosemary. Added chik-un strips to the olive oil/butter and threw in the rosemary. I don't think I added anything else. Delicious! Eating it right now. I served this with vegan mac-n-cheese and frozen brussels sprouts that I roasted with garlic powder, onion powder, salt and balsamic vinegar.
