Savory Spinach Dip

What you need: 

1 package (12 ounces) silken soft tofu, drained (I use MoriNu)
1 (1 3/4 ounce) package onion soup mix
1/2 cup vegan mayonnaise
3 large cloves garlic, peeled
10 ounces frozen chopped spinach, thawed and drained well
1 (8 ounce) can sliced water chestnuts, drained
1/4 cup green onions, thinly sliced

What you do: 

1. Drain tofu and pat with paper towels. Place tofu in food processor, blend until smooth.
2. Add onion soup mix, mayo, and garlic. Blend.
3. Add spinach, blend. Add water chestnuts and thinly sliced green onions. Pulse just until chunky.
4. Refrigerate at least an hour before serving.
Source of recipe: I found the following recipe for spinach dip on the side of a Mori-Nu silken tofu package (slightly modified)!

SO HOW'D IT GO?

This stuff is so addictive!  Very yummy. 
I omitted the extra onions because the soup mix was so flavorful and I added a few artichoke hearts. 
This batch was a test run for a party I'm having next week.  I'll be proud to serve it to my guests. 

Have you ever tried baking it?  Does it change the consistency? 

If it was runny your spinach was most likely too wet... that happened to before you really need to squeeze the hell out of the frozen spinach... I haven't tried baking it but it would definitely change the consistency
