Strawberry Lava Brownies

What you need: 

1 cup flour
1 cup brown sugar
1/2 cup cocoa
1/4 teaspoon salt
1/4 cup vegetable oil
1/2 cup water
1 teaspoon vanilla
8 large strawberries, divided
2 tablespoons strawberry jam, divided

What you do: 

1. Preheat oven to 375 degrees F. Spray 2 mugs or large bowls with cooking spray. Make sure they are oven safe. Mix flour, sugar, cocoa and salt in large bowl.
2. Make a well in center, and stir in oil, water, and vanilla. Mixture should be slightly stiff and fudgy consistency. Fill both mugs halfway with dough, then place 4 strawberries in each.
3. Cover strawberries with remaining dough. Drop 1 tablespoon strawberry jam on each. These brownies do not rise, so fill free to fill up mugs all the way! Place mugs on cake pan for convenient use. Bake for 30 minutes.
They are called lava brownies because the center does not bake all the way through. (If you don't like this, bake them for 45 minutes.) The outside and top are brownie consistency and the center is melted. The strawberry jam adds a nice touch. They are absolutely delicious and my favorite recipe! Go ahead and spoil yourselves!
