Super Stuffed Peppers

What you need: 

5 or 6 bell peppers, cut in half lengthwise (top to bottom), seeds and ribs removed

2 c. cooked brown rice (or other grain I suppose)

3 Roma tomatoes (other varieies are too watery), chopped

1 onion, diced 

1 can hominy (corn if you don't like hominy)

1 can beans (whatever kind)

1 can black olives, sliced

1 cup tomato sauce

salt and pepper to taste

Optional to add "meat", I'd use 1 cup.

Top with "Melty Cheese (mock cheese sauce)", recipe from this site. GREAT recipe btw!!

What you do: 

Obviously this is an incredibly versatile recipe. Here are the directions for the basic recipe:

1. I prepare my rice with the diced onion in the cooking pot, otherwise the onion won't really cook in the peppers and thats just nasty. Also in the rice I add a few drops of lemon juice, salt, and "better than bullion" veggie kind.

2. Preheat oven to 350

3. In a big bowl mix  rice (and onion), hominy, beans, sliced olives, tomatoes, tomato sauce, salt and pepper, and "meat" (if you're using it). Mix well. If Mixture ssems too dry either add a bit more tomato sauce or just some water

4. Fill pepper halves, slightly mounding it up. Line peppers up in a 11x13(ish) glass dish and cover with foil. Bake for 45(ish) mins.

5. Uncover from foil. Turn oven to broil, pour "Melty Cheese (mock cheese sauce)" over top and broil for maybe 10 mins, but watch them! I tend to burn whatever I attempt to broil by walking away and forgetting.
