Tex-Mex Linguine

What you need: 

1 small yellow onion, diced
3 cloves of garlic, finely chopped
1 green pepper, diced
1 celery stalk, diced
1/2 cup of chunky salsa
1 carrot, diced small
Half a pack of Yves Ground Round or 816]Morningstar Farms® Grillers® Burger Style Recipe Crumbles
1 cup of crushed tomato sauce
1 tablespoon olive oil
1/4 water
1/4 vegan BBQ Sauce
1/2 box linguine

What you do: 

Boil half a box of linguine as directed.
Chop all veggies up as advised above. Heat a saute pan and add olive oil. Add the chopped onion to the pan, saute till tender, and then add garlic. Cook for about 2 minutes then add the pepper, carrot and celery. Saute for about 5 mins. Then add BBQ sauce, crushed tomatoes, salsa and water. Allow to simmer for 10 minutes. Add crumbles and allow to simmer for about 5 minutes.
Plate noodles and poor over sauce. Great with some read for dipping!

"This is delicious!" That's what my omni mother said about this dish.  I needed a quick recipe to cook up in 1/2 hour at her house.  My mother had some fettuccine, vegetables, 1/2 package of Gimmie Lean sausage (because she's trying to lose weight and really seems to like Gimmie Lean sausage), and condiments like salsa and BBQ sauce--this recipe fit the bill!  It was simple, fast, and tasted wonderful.  I will be making this again at my own house for my husband next week.
