Tofu Croquettes

What you need: 

Croquettes:
2 pounds tofu, drained and crumbled
1 cup onion, minced
5 1/2 cups seasoned bread crumbs
1 cup chopped or ground nuts
2 tablespoons chicken style seasoning (I use McKays)
1 teaspoon sage
1 teaspoon thyme
1 cup water Gravy:
6 cups hot water, divided
1/4 cup slivered blanched almonds
1/4 cup unbleached white flour
2 tablespoons chicken style seasoning

What you do: 

1. Combine croquette ingredients, and mix well. Chill 1 hour or overnight to firm up mixture.
2. Preheat oven to 350 degrees F, and spray casserole dish with nonstick spray. Form mixture into large croquettes. Place in prepared casserole dish. Brown in oven for 20 minutes. Chill until ready to reheat.
3. For gravy, place 4 1/2 cups water in saucepan and bring to a boil. Combine 1 1/2 cups water and the remaining ingredients in blender.
4. Process until extremely smooth. Pour slowly into boiling water, stir constantly until thickened. Pour over prepared croquettes. Bake at 350 degrees F for 30 minutes. Serve hot.
