Tofu Salad Sandwiches

What you need: 

1 large carrot
1 celery stalk
1-2 cloves garlic
1/4 large onion
Dijon mustard
1 tub (14oz) silken tofu
sprouted wheat bread

What you do: 

Mince all vegetables (a food processor might be handy). In an bowl, mash tofu leaving some chunks. Mix vegetables with tofu. Add dijon mustard to taste (1 tbsp). Spread on fresh sprouted wheat vegan bread (or your favorite healthy bread). Enjoy!
