Vegan Ceviche
1 36 ounce bottle ketchup, refrigerated
1 liter orange soda, refrigerated
2 cups shredded carrots
1 cucumber, seeded and chopped
1 small red onion, diced
1/2 cup lemon juice
5 avocados, chopped
5 roma tomatoes, chopped
4 to 6 serranos, seeded and finely diced
1 red, yellow, or orange bell pepper, chopped
1) Cover diced red onions with lemon juice in a bowl and set aside while you make the soup.
2) In a BIG bowl add all the remaining ingredients: ketchup, orange soda, bell pepper, carrots, avocados, cucumber, serranos. Then dump the red onion/ lemon juice mixture into the BIG bowl as well. Mix everything around for a minute and your ready to serve.
Tastes awesome with tortilla chips.
This soup is meant to be served cold.
