Yancakes

What you need: 

1 cup coconut crumbs
2 tablespoons vegan margarine
1/2 water
2 cups flour (we use whole wheat)
1 1/2 cups soy milk (you can totally use chocolate soy milk, for canadians, we use the brand 'Silk'' or ''Natura'', you can also use almond milk but it is a little more sugary)
maple syrup (a must!)
2-3 medium bananas

What you do: 

1- Use a bit of soy milk to mix bananasin bowl. Heat them in microwave orsimply beat them for a little while tocreate cream.
2- Put flour in large bowl (you will addeverything in, so consider the size),make a hole in the middle to pour, addwater and milk, mix smoothly with love.Add banana mixture
3- Take pan, put a little bit ofmaragine in, and pre-heat to high.
4- When all is mixed, add coconut,(vanilla extracts if desired or maplesyrup, don't be shy). Go with thetexture. You don't want it too liquidynor too pasty. But we still go moretowards the pasty.
5- Put the heat down to medium (youdon't want to burn it all since you'renot completely wide awake)
6- Take large spoon that can hold maybe1/2 cup of mixture and pour it on thepan. You can make heart shapes! Youdon't need to stretch it too far, youwant them to be a little chubby!
7- Finally, serve with a smile and aglass of juice or hot chocolate-peppers!Maybe even side of fruits, drips ofmaple syrup and you're off to a good day!
Please take not that it can differ fromtime to time and don't be afraid to foolaround with it!
We alter with: jasmine green tea, whole wheat is more pasty than regular flour, chocolate of choice (free trade please!), berries
