im so excited! new cookbooks!!

after reading the first 5 or 6 pages of the Veganomicon Recipes post, i decided to finally get it. i also got VCTOTW  :D

i can't wait to start making some of these recipes!! i'm gonna make something this saturday for me and my very non-veg boyfriend (actually... he does eat lots of veggies and fruits--most of the time even more than me!--but he still eats a lot of meat)

also, it was pretty cool that when i checked out at Borders, the girl that rang me up got all excited and told me how she has Vegan Planet and that i should check out ppk. it was cool to find someone else around here that doesn't have the reaction of "vegan? ew! i need meat in my food!", someone that doesnt look at me like i'm a total freak.

i just can't decide what to make! or which cupcake to make out of VCTOTW  ;D

Yay! Have fun! I still haven't had time to fully explore all the wonderfulness of Veganomicon, but what I've tried thus far has been delish :)

i didnt read the Corn Gravy recipe yet, but i did see the Southwestern Corn Pudding recipe and that looks good.

i'm gonna make the golden vanilla cupcakes with buttercream frosting today--start out basic and then start fooling around with the other recipes :)

i probably would've done it last night but i need to buy shortening. i just hope it looks and tastes better than the last time i saw shortening--looked & tasted like vaseline  :P but then again, i guess you put enough powdered sugar in and anything can taste good

:( well i made the cupcakes and those are kinda good, but my Fluffy Buttercream Frosting didn't come out fluffy at all. it was really runny and i kept adding confectioners sugar but it wouldn't thicken up and just tastes like confectioners sugar now, not even a little hint of vanilla.

jeez, that's no good. my buttercream frosting seems to turn out ok when I make it. did you leave things room temperature? that's important to do. what kind of "butter" did you use? I don't know - any thoughts on why it didn't turn out? I wish I could help.

by the way - the cookies 'n cream cupcakes ROCK!!!

Awww, bummer!

The key to frostings (in my kitchen) seem to be letting the EB and EB Shortening come to room temp over several hours.  I just toss it in the Kitchenaid bowl and let it sit while the cuppers bake.  When they are ready to be frosted, sometimes 3 hours later, I start making the frosting.

Whip the margarine & shortening well.  Measure the sugar into a bowl first!  I sometimes miscount when adding in scoops with mixing time in between.  Add the vanilla last.  Beat it for 3-5 minutes until the color changes. 

If you are doing this by hand it can seem to take forever but stand firm and it shall work!  I always need to remember to measure things out ahead of time.  Thats where I mess up at!

i  use Fat Free Can't Believe It's Not Butter  :-\ everything was room temp..

i tried to make the chocolate buttercream about an hour ago and i mean its good chocolate frosting, but that wasn't fluffy either! frustrating..

Are you using a shortening or just the margarine?

If you followed the recipe exactly, use the right amount of ingredients and beat it for 5 minutes and it still came out not fluffy then I would question the actual ingredients you used.  Not sure why it would not turn out.

I used the above as an example of where I typically go wrong.  I dont follow a recipe, I dont measure properly or I miss count, I dont let the mixer beat it for long enough to see a color change and have it get fluffy.  Do you have access to Earth Balance?  Maybe try to change one of the ingredients.

I am so sorry it didnt work!  :(  It should all taste awesome.  Honest!

next time i go to my local natural food store i'll see if they have EB. i've never seen it at my grocery store.  but yeah i did follow the instructions because i wanted it to turn out good but after whisking for 6 minutes my arm was really hurting and it wasn't getting any better.

maybe you should invest in a little hand mixer. they're not too expensive, and they make things super easy.

i have a stand mixer but i was making 1/4 the recipe because i didn't need all of it, so it was such a small amount of frosting that it would have been pointless to use it, and the whisk attachment probably wouldnt have been able to reach the ingredients in the bowl  ::)

we have a hand mixer around here somewhere... i'll have to look for it next time

That's what happened to me! I used EB, though.  I thought everything I had was at room temperature...but I guess...I could've...room temperatured it more?
And it was just one time that it didn't come out fluffy, and another frosting that was not frosting-y.  The mint ones' frosting came out fine and I used the same ingredients methinks

i've been baking for years and i cant even make a fluffy frosting lol granted, this is the first frosting i've used that didn't come from a jar....  ::)

i noticed that when i make frosting with soy garden it holds up better than earth balances buttery spread.  the eb seems to get soft alot quicker at room temp and kinda gets melty/oily/separated a bit (especially if you are putting it into a pastry bag to apply it, cus then the heat from your hands can make it extra soupy).  just make sure you pay attention to what kinda base you use.

the consistency of my frostings from vctotw really depends on the room's temperature (melts easily when warm). so now i just beat the EB straight out of the fridge with the other ingredients, and if it's too soft, i stick it back in the fridge for an hour or so, rebeat, then frost. i haven't tried using a decorative pastry bag though...
