Veggie/Vegan Scrapple?

Now I'm not a New Englander, and I've actually never tried the real thing - which makes creating this vegan version for my Delaware raised gf a bit challenging. I've heard many rave reviews for "Vrapple" but it appears the creater has since discontinued selling it. It looks like the main ingredients are a wheat gluten, cornmeal & buckwheat flour base, with your savory and sweet ingredients added in.

Using this recipe as a base, I'm going to make a run at making vegan scrapple, adding in some of the ingredients from the Vrapple version. Has anyone actually tried Vrapple and/or does anyone have any tips, alternate recipes, etc. that could help?

I'll be happy to post my results and recipe once I've gotten it down! Thanks!
