I'm compiling a list of 101 ways to use Avocados since reading that they can lower your cholesterol by 17%!
Here are the few I have now:
1) Guacamole
2) Fried in a Sammy( off VW site)
3) Made into Sandwich spread( off VW site)
4) On top of Spaghetti(off VW site)
5) On top of Sammies
6) Substitute for Mayo
Any help would be appreciated ;)b
As you can see, I have a long way to go :o
eat with spoon, spread on bread, put in salad, put in homemade salsa, make creamy pasta sauce, mix into pasta...........you can do anything with the best food in the world.

I normally don't use a recipe, but this is pretty much how much of each ingredient I use:
1 avocado
1 T coconut oil
2 T agave
1/4 C cacao
Give it all a good whirl in a food processor. Scrape down the sides and process again. Do this until well mixed.
You could also add some vanilla extract, banana and/or salt. Just play with it and find the perfect mix for you.

Thanks for the recipe:) I hate to sound stupid but what is agave & cacao :-[
No problem! :-)
Agave is a liquid sweetener. It's pretty easy to find. Even my regular grocery store sells it. If you can't find it, you could always use maple syrup or date paste.
Cacao is what chocolate is made out of. I buy raw cacao powder. I've never used baker's cocoa, but I'm sure it would work the same.
i love as sushi filling... and like stated in sandwiches, guac... a topping for any type of latin cuisine i like to add it on top of chili or soup, in 7 layer dips, even plain with some salt
I haven't found a way to prepare them yet that I like, but my daughter loves them. (It's the texture that gets me.) In addition to the ideas previously mentioned, I dice them and put them on her food like a omni would use shredded cheese, mostly Mexican dishes, i.e. tacos, burritos, quesadillas, enchiladas, tortilla soup, etc. I have seen numerous recipes for avocado-chocolate cream pies, but I've never tried them.
Mashed onto toast that has previously been rubbed with garlic, and then top with a bit of My Favourite Spice Blend. http://vegweb.com/index.php?topic=33458.msg411364#msg411364 Good for breakfast or a snack.
Put diced avocados on chili or tortilla soup, or any spicy/Mexican-style soup (as a topping at the end...don't cook them in the soup).
This reminded me that I have one! I'm going to put some on my sloppy joes.
cut up into chunks with a little sea salt.
I have not tried it but have heard of people frying the avocado. I like to stir avocado into some noodles to give it a creamy texture.
When I make green Thai curry I like to put chunks of avocado on top of the rice on my plate before topping with the curry. Yummmmbles.
I know smoothies has already been said, but I just want to say my favorite way to use it in a smoothie. Well, it's basically like an ice cream shake. Just blend the avocado with coconut milk, sugar (preferably palm sugar) and ice, and violá! Amazingness.
Wow, everyone has such fantastic ideas:) Think I'm going to try each and everyone ;) Keep the ideas coming...365 avocados a year is alot of time not to get bored with the same fruit ::)

Gee I wish I could afford an avocado a day! But in terms of price and calories both, it comes too high for me!
yg, After I found out that avocado's can lower your cholesterol by 17% in just 8 weeks because it has the good mono fat in it. I did the math. The cholesterol medicine they want to put me on is $198 a month and an avocado a day would be just a little over $34 a month. Plus it would be a nature way to lower my cholesterol instead of more medicine in my body ;)b
On crackers, like cheese.

Well I see your point about chemicals, but here in Spain because my husband is retired we don't pay for prescription medication from the NHS. They've taken it out of his taxes for the past 40-odd years.
