freezing bananas

Just a quick Q...like many of us on here, I like to freeze my bananas when they get too ripe. However lately Ive been finding that when I take one out of the freezer to use in like a smoothie or something, it makes the smoothie taste really wierd. Like theres something wierd about the banana...can they go bad in the freezer? Or am I putting them in the freezer when they are already too ripe? I dont know...any thoughts?

If they've been in the freezer a long time, they can get freezer burn and the ice crystals will make it taste a little funny. :P

thanks for your replies! Yes they have been in the freezer for a long time, and there are ice crystals on some of them, so that may be  why they taste wierd. And they are also peeled, so maybe I should try putting them in unpeeled.

so do you think I could still make banana bread or something out of the ones that have freezer burn/ice crystals  or should I just throw them out?

I suppose it depends how weird they taste. I do the same (almost) as Baypuppy. Throw 'em in whole, with the peel on, slice the skin down the length of the banana, then I let it thaw about 5 minutes, chop it in half, widthwise and peel off the skin, which tends to come off in one piece as long as it is thawed enough (to much makes it mushy).

If you can make banana bread out of a banana that is brown and disgusting (and you can, my mom always said they should "be ripe enough to feed a month-old baby"), I'm sure an ice-crystal here or there won't make any diff. Never pass up the chance to make banana bread/muffins!  ;)
