Lunch ideas needed for busy college student!

Hey everyone! I am a college student (obviously), and two days a week I have class straight from 10:30 am to 3 pm. That's not so bad, but I need lunch to concentrate, or else I focus on my grumbling stomach. I don't have time in-between classes to stop and eat or to grab something on campus - I barely even have enough time to get from one class to the next without being late - so I need to bring something that I can either eat while walking or can be devoured in five minutes. I'd also like it to be healthy. The only thing I can think of right now is sandwiches or energy bars, but I get bored really easily and would like some more ideas (plus, energy bars are hardly filling to me). Any thoughts would be appreciated!! Thanks in advance! :-)

p.s. i know what you mean about energy bars. i have to eat at least two (even cliff.. sad, i know)

I got a book the other month, and have yet to do more than just glance at it, but it's called something like The Student's Go Vegan Cookbook.

Sorry I couldn't be of more help; perhaps I'll read it... soon?

I don't have such a long time at classes without a break, but I don't live on campus, so I've decided to bring (a rotating assortment of): larabar, dried fruit, nuts, etc.

Get a small slow cooker. They don't cost much.

Make vegetable dishes, chili beans, vegetable curry, soup, home fried potatoes, etc.

Make the dish the night before, plug in the slow cooker. The next morning, when the food is ready, just pack it in a plastic container with a chunk of bread, fork and napkin, and you have a healthy meal to enjoy in between classes.

Salads also work, though I don't know how well they'd keep during the day. Cold mac-n-"cheese" is also tasty.

I third the energy bar stance. I eat them as snacks and that's about as filling as they get.

I liked to carry around baggies of nuts and a piece of fruit and a granola bar or something.  I loved sitting in class with my little baggie of nuts comping down.  ha.  I saved the granola bar (loud wrapper) and fruit (oranges are messy sometimes) for between classes.  Since i lived in the dorms, I wouldnt have a whole meal, just little parts here and there, it worked out well.  and those busy days were only m,w,f.  so that was good too!  good luck!

i go back to school tomorrow. we get 30 minute lunches. i'm bringing a hummus wrap and peanut butter crackers. wraps are awesome for on the go.

I usually grab some pita bread with peanut butter and bananas.  Quick and simple to make.

This is a recipe I found on allrecipes.com a while back but never got around to using it.  They're called "power cookies" and they sound really good.  Maybe you could make a batch of these and use them to sustain you; perhaps spread a type of nut butter on them as well if you like.

POWER COOKIES

INGREDIENTS
4 cups rolled oats
1 (15 ounce) can cannellini beans, drained and rinsed
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup chopped pitted dates
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped walnuts
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets. Grind the oats in a blender until resembling coarse flour.
In a medium bowl, mash beans to a smooth paste. Stir in the white sugar, brown sugar and vanilla until well blended. Combine the ground oats, baking powder, baking soda and cinnamon; blend into the bean mixture. Stir in the dates, coconut, raisins and walnuts. Drop dough by heaping spoonfuls onto the prepared cookie sheet.
Bake for 10 to 15 minutes in the preheated oven, until golden. Cool on baking sheets for 5 minutes then remove to wire racks to cool completely.
