Tomatoe Pie idea?

Ya'll help me take this great idea and go further with it.  I would love the taste of a tomatoe pie. This recipe for tomatoe pie sounds good but turns out greasy as in oily.  It can easily be made vegan.  But can we all put our heads together to take a great start and make it a great idea as in what to put in it so it's not greasy?.

Baked pie shell

Sliced tomatoes, fresh basil leaves, chopped green onions, alternated in the baked pie shell.

Combining mayo, mozerella cheese, and chedder cheese and pouring it over the layererd tomatoes basil and onion.

When I fixed it, it was greasy what with the cheese and mayo merging.

What ideas would ya'll think to do with the cheese and mayo to cut the oily taste?  Just cutting down on them doesn't help, about a cup of each ( of something) is needed to cover the tomatoes.

Oh yeah, duh, forgot to mention that it gets put in the oven for a few mins to melt the cheese and merge everything, but not really to cook.

Mushrooms perhaps? It is so simple, I didn't think it needs to be complicated much more, and the aim is to retain the tomatoe taste and compliment it.

Thanks.  Hope you guys get into the spirit of my intention which is fun, creativity  and good eating, and for tomatoe lovers, trying it yourselves.

Hmmm. I think I would cut the mayo altogether. If anything else needed to be added maybe just a little plive oil or perhaps white bean spread.

Yeah, I agree. I can't see what contribution the mayo makes. You could just add a little more seasoning, maybe a tiny bit of lemon juice. Baking mayo, vegan or not, just seems...I dunno...weird.

3 cups of fat on top of the tomatoes sounds pretty gross.  Do the tomatoes need to be completely covered?  Like the other posters, I would eliminate the mayo and cut the cheese down as well.  What about bread crumbs?

I have to be honest, this was Paula Deen's idea I was trying to make less greasy.  Just type in tomatoe pie, paula deene.  But it sounded so good, and I actually made it by her recipe, and that is when I really got it that it is hard to modify her stuff up.

The mayo, even vegan does fat it up, but it was the moisture that the tomatoes need on top.  Something to keep it from drying out.  And like I said, it's not really baked, just heated thru.

Maybe I could just turn it into a vegan quiche.

Thanks for your ideas.

Keep em coming.  :)
