Wedding meal suggestions?

Ok, this might be a little long, but bare with me. Here's my scenario. I'm the Maid of Honour for my friend's wedding coming up at the end of this month (July). The meal she choose was a turkey dinner. She knows I'm Vegan, and obviously I understand that she can't accommodate an entire meal for 250 people just because I am Vegan. I have no problem with her choice. However, obviously I can't eat any of the dinner (butter, eggs, etc) so she was kind enough to ask the lady at the hall (who's preparing the meal) if it's ok if I bring my own dinner, and when the head table's dinner is served, they'll just serve me my own. The woman said it was fine. Here's my problem.. I don't know what to cook for myself! I mean, I want something tasty and yet elegant to be served at the wedding, yet I want variety. I know I'm making some vegan perogies, but as for anything else, I really don't know. I was thinking a nice fancy tofu dish, but I don't know which is good, which is not, etc. Any suggestion would help!

Maybe a wild rice, almond and mushroom stuffed squash with a brown vegan gravy on the side...steamed asparagus w/ red wine vinaigrette and vegan parmesan sprinkles...

Why not make a vegan version of whatever she's serving?  UnTurkey is amazing and Tofurkey is very good.  Plus it's pretty easy to veganize traditional sides...

that is a good idea. At my wedding I was the only vegetarian.  We were going with a light lunch at my wedding, so for my meal I had peppered tofurky slices on bread w/avocado, tomato and spicy mustard.  And pasta salad.  That is a little less elegant, but a vegan version would perhaps get others interested in what you are eating!
