Hi, everyone,
my name is james, i'm 26 and live in toronto.
i've been a vegetarian since i was 12, after my parents (and then me) read john robbins' "diet for a new america" and decided that meat was not something we wanted to consume/support. i have eaten meat a few times since then, and all it did is remind me how repulsed i am by it and reinforced my belief that i'm doing the right thing by avoiding it.
this past year, i have been cutting out animal products with the goal of going vegan. i no longer eat "direct" animal products (ie milk, eggs, butter, honey) but still consume things with animal-derived ingredients in them (though i am phasing them out - still learning all of the hidden ingredients and what they really are). my one sticking point is cheese - i really like it and all of the nutritional yeast recipes i have tried have not been to my liking. i also am trying to lose weight, so all of the nut-based cheese subs are not feasible for my diet.
don't get me wrong, i am fully prepared to just give up cheese, as my morals definitely trump my tastebuds, but i worry that without a substitute, i may one day go back, and i don't want to.

I love cheese and miss it terribly.  There is no substitute for cheese.  End of discussion for me.  I don't even try to find a substitute.  I will occasionall  eat a substitute like Rice cheese on a sandwich, but it's totally unrealistic to thinkt here's going to be a replacement for grilled cheese, or pizza.  People try and some people like the fake cheese and good on them.

When tempted, I just remember the cruelty and why I went vegan.

I still miss cheese too, but if I can do it you can do it!!  I used to eat cheese on everything!!!

Welcome! It sounds like you're really doing it right and making good decisions. I used to love cheese on everything, but now I really don't miss it anymore. I'm not a huge soy cheese fan, however I do love the nutritional yeast. You'll find what you like. VegWeb is an awesome resource!

Just give up cheesey stuff for good and don't try to substitute it because it doesn't work at first. It took me years to develop a taste for nutritional yeast and cheese replacements but now I don't miss dairy cheese at all. Yeah, like Tweety said. You can do it!

Welcome! Awesome goal for yourself :) I think many of us miss cheese but I got over it... I just remind myself of why I don't want to eat that crap anymore

Regarding cheese, have you tried Vegan Gourmet or Vegan Rella? Maybe it's just me, but they both look and taste like the dairy versions. Both come in blocks, so you would have to shred it for tacos or pizza, but it only takes a few extra minutes.

I used to eat cheese by the block but I honestly have not missed it since going vegan over a year ago.  I think the processed cheese substitutes are pretty disgusting, so I don't use them, with the exception of Daiya, which some local restaurants use and it's excellent. 

Congrats on your decisions to go vegan!  It's a great way to live...the joy of being vegan is much better than the taste of cheese!

I have to tell you that I used to LOVE cheese, and even though I never had any since going vegan I would tell everyone, that I kinda missed cheese pizza.  I can proudly say that I no longer do! I've been vegan for 2 and some years and I do not miss cheese anymore at all!!! It will get easier, just like anything, with time :)

As far as cheese cravings go, In the past I ordered  a couple rounds of Dr. Cow's cashew cheese when I got a hankering for something cheesy. They are quite tasty in my opinion, only thing is they are usually $6-8 a piece for what most people would consider a sample-size wheel.

After that I tried my hand at making cashew cheese. That kinda flopped, and is time consuming, so I haven't ever tried to make a second batch.

However, I've heard good reviews on the "Uncheese Cookbook" by Joanne Stepaniak, if that might strike your fancy.

i've actually found some great vegan cheese from the UK here in Holland. maybe you'll have the same luck. everyone says to wait awhile before trying the vegan dairy subs, but i personally find them perfectly useable  :)
