Superstar VegWebber of the Week: charlie_fo_farley!

This week's Superstar VegWebber is charlie_fo_farley (http://vegweb.com/index.php?action=profile;u=180536)! First off, who hasn't tried his Second Siesta Chocolate Breakfast Burritos (http://vegweb.com/index.php?topic=39798)?? Because if you haven't, you're missing out! It's soooooo delicious! On top of that, there is nothing this guy can't do! From martial arts to vegan cooking? Love it! However, we have to help him! He's still looking for the perfect vegan mac 'n' cheese recipe! Any suggestions? I'd like to throw the VegNews recipe (http://www.vegnews.com/web/articles/page.do?catId=10&pageId=40) into the mix, because it's my current favorite! But that could change at any time! Oh, and the Fat Bottom Bakery award-winning mac 'n' cheese is definitely worth trying too: http://fatbottombakery.blogspot.com/2009/08/who-cares-its-just-award-winning-mac.html So delicious!! Where do you call home? Castalian Springs, TN, outside Nashville, in the sticks.

What do you do when you're not on VegWeb? There is something to do besides VW?! I workout, work with recovering chemical dependency folks, hike in the hills of TN, boating, martial arts, cook (great VW recipes), write short stories, argue with meat eaters about B12, etc.

Do you have blog or website? No, I am not that trendy.

Do you tweet? No, I just don't see the appeal. Of course I did not see the appeal of facebook a week before I became addicted to it last year.

One unique thing we should know about you? If I go the rest of my life without smelling alcohol or seeing a "recreational" drug, I will consider my time on Earth not a complete failure. All else is gravy (vegan gravy).

What’s the best thing about being vegan? (if you are!) Not having to read many food labels anymore and no longer being swayed or dissuaded by the fad diet of the day. The wonderful food and the healthy folks, mostly all interested in maximum spiritual and physical well being, and sharing that with others. I know that was a couple things, but it is MY award (15 mins of fame), dammit

Favorite romantic recipe on VegWeb? I am not sure; I am open to suggestions or tutoring from another VWer to show me that tho....

Favorite recipe on VegWeb to make for non-vegans to show them how amazing vegan food can be? Seriously there are SO many. It depends first on cuisine. I do a variation of the superb Chickpea Tacos on here that seriously can make one pass out from pleasure if they eat too fast. Also a shepherd's pie. I made black bean burgers tonight from VW and they ROCKED!!

Favorite healthy recipe on VegWeb? Chickpea tacos - versatile, can get about 50% raw, with all the fresh fixins, quick.

Favorite VegWeb recipe for summer? I love them all; a vegan of all seasons.

One thing you wish you could make vegan but haven’t succeeded at yet? Mac and Cheese. All attempts thus far have actually served to 90% remove the craving for the real thing, as they were so-so at best. This is less reflective of the recipe creators and more that I am still learning the fine art of un-cheeze.

#1 Cooking secret/tip? Put the oil or veggies into recipes at the last possible moment, limiting the exposure to heat. For instance, I spitball a black bean soup once a week or so. I heat the beans with veggie stock, then right before taking it off I add the chopped onion and carrot, then remove the heat. The veggies soak up some heat, but leave a hearty crunch AND leave some of those glorious living enzymes and amino acids that kick animal flesh protein's pail skinny ass

Best music to cook by? Mozart or Tiesto

Three people you'd most like to have dinner with? Dead or alive? Dead: Howard Hughes, Chris Farley, Jiddu Krishnamurti; Alive: The Edge, Gillian Anderson (if she didn't order dairy), Alison Krauss (if she didn't order steak) (hmmm maybe even Alison with Gillian?!! ... typical!)

All time favorite restaurant? I am going to have to disappoint/irritate some folks, but Emeril's (the original) in New Orleans by far. Have eaten at all 3 of his restaurants in NOLA and the original is unbelievable. Was an omni at the time, but OMG. I went in with dockers and button down w/o tie or jacket once and they made us sit in the lounge area away from the main dining (a-holes) but they get lots of critics and reviews on spur of moment so they have to maintain highest image. Have eaten there a few times and it does not disappoint. Not sure what they have that is vegan tho; I won't tell what I had....

French fries or ice cream? FF: very seldom; IC: like 2x in a year - rice cream, I look for clearances or closeouts, otherwise I pass. Now I get down on some PB&J!!

Soy milk, rice milk, almond milk? ALMOND, but also coconut. Rarely soy.

Tofu, tempeh, or seitan? Tofu, but I don't try to replicate meat so much. I like spiking up the flav on some veggies and learning from VW folks ways to do that. Also the more raw I do, the less any have a place.

Congratulations charlie_fo_farley! Your Second Siesta Chocolate Breakfast Burritos really sound amazing and I will be giving them a try. Hope you can find a mac n cheese recipe that you like.

AchAch - I have yet to have Daiya. It is hard to find out in my neck of the woods. All the places that their web site says they distro to don't actually have it. I was doing Galaxy Nutrition cheese for a while till someone on here informed me that it has animal protein (casein), which it most certainly does. Now I have been going without and don't miss it much. Some day.....

i agree that your dessert burrito recipe sounds insanely good!

give your taste buds some time and some nooch sauce covered mack and cheeze will taste legit... i like VW's Melty Cheese, but only with plain soymilk
