If you can't tell...I am really hungry right now--there was no way I could just pick one food *lol*
Also--just a little heads up--apparently a lot of places that make maple syrup cut it with lard! Be careful when you purchase your next bottle!! <3
tofu scramble with lotsa nooch!
Chilaquiles verdes (tortilla chipped cooked in green salsa to make them softer :o), with refried beans, tofu scramble and cactus salad.
Oh, do I need this book! My brunches are boring!
I guess my favorite is scrambled tofu (made the way Gary Beardsworth (Recipes from the Moon) late owner of the late Horn of the Moon Restaurant, Montpelier, VT told me to), accompanied by homefries with onions & green & red peppers.
Tofu scramble with lots of mushrooms and onions, whole wheat toast, and a side of tempeh or seitan "sausage"
YUM YUM!

I just won, so I'm just replying for fun. I love tofu scrambles or frittatas, and extra crispy hashbrowns
A vegan omlette stuffed with veggies and maybe cheese, along with some crispy seasoned home fries, coffee and great company. Definitely worth getting up for!
Pancakes with just enough maple syrup to soak into them and powdered sugar. Or muffins.
Can I answer twice I just remembered an excellent vegan quesadilla with a ton of roast veggies and cheese, and a side of refried beans and salsa I had at a local restaurant once for brunch. It wasn't quite as good when I tried making it myself, but definitely delicious.
Scrambled tofu with crunchy baked blue corn chips and smoky avocado sauce!
Biscuits and gravy! There's not a single restaurant in SF that serves vegan biscuits and gravy, and it makes me so mad!
Christmas Morning Wife Saver is always a big hit!
FRENCH
TOAST!!!!!!!!
(sans egg of course!)

I like Tofu Scramble with Hash browns and lots of ketchup.
But Pancakes with Banana and Maple Syrup are pretty good too.

I never really find myself eating at typical brunch time, but we often have breakfast for lunch and dinner. Does that count?
When we do, its either a vegan omelette, pancakes or tofu scramble!
Noah always requests french toast on his birthday for dinner!
I really want to win this. :)>>>
Two words: Pan. Cakes.
With maple syrup usually but going a little bit Russian and having blueberry jam on them is great too. The other day I made a pancake sandwich with mushrooms in the middle. That was goooood.
