Alison's Famous Easy Pea Soup

What you need: 

1 16-ounce bag of split peas
2 quarts water
1 8-ounce can vegan chicken broth
1 carrot, chopped
1 potato, chopped
1 stalk of celery, chopped
1 onion, chopped
salt, to taste
pepper, to taste
1-2 bay leaves
basil, to taste

What you do: 

Throw all ingredients in large pot and cook for 2-3 hours stirring every 30-60 minutes. That's it!

5 to 10 minutes, Cooking time: 2 to 3 hours

Easy to make, had this for lunch. I decreased the cooking time and added some thyme and extra vegetables, thanks for the recipe

I haven't made this one in a while and decided to try it out tonight. It's still fantastic! My omni boyfriend loves it. Next time, however, I'll add some thyme and use shallots instead of regular onions. Also, cooking time for me is well under three hours. Thank you for this easy and yummy recipe.

...and I'll try another version with curry and cumin one day!

This soup is amazing! I've never had pea soup before, but this recipe just sounded so good I had to try it. I made it without the potato and bay leaves (because I didn't have any around). I also used about 5 stalks of celery and a bunch of chopped baby carrots. The soup turned out nice and hearty and thick, and very tasty. This will definitely become a staple in my recipe box. Yum!

I have made this a couple of times successfully, although not really to the letter.  I like to saute my onions and carrots (and usually add in the potatoes and celery here, too, along with bay leaves and a big spoonful of hot smoked Spanish paprika (pimenton) before adding my liquid. Sometimes I am lazy and use water and the veggie BTB paste (or, now, Trader Joe's has a vegan liquid broth concentrate that's low sodium); other times I use my own broth. Today I added a big spoonful of cajun seasoning to the mix to play off of the celery and the hot smoked Spanish paprika and bay, and there'll probably be more hot sauce added at the table.

Oh, and I up the veggies. I use  about 1/2-1b carrots and at least four medium potatoes, usually yukon golds. The celery all depends on the price and the quality -- I live in New England and reliably good, affordable celery is not always an option.

I have never eaten split pea soup before, my carnivore boyfriend adores it so, I decided to try a vegan version. It was awesome! I went a little heavier on the spices including a few dashes of curry powder. Just the right thickness from the crock-pot. I also added Gimme Lean sausage chunks, wonderful recipe!

Have you ever (also) tried chick peas in a pea soup? They seem to go well.
