Chard and Tofu Pasta

What you need: 

1/2 lb. pasta
1 med. bunch chard, torn or chopped into little pieces
1 block firm chinese-style tofu, diced
1 jar tomato sauce
8 oz. mushrooms (any kind is good), sliced

What you do: 

While pasta is cooking:
Cook tomato sauce and chard, stirring often, until chard just begins to wilt (about 6 minutes).
Add mushrooms, continue to cook until mushrooms are soft.
Add tofu, cook until heated through (keep stirring every now and then).
Mix in pasta, devour!

SO HOW'D IT GO?

Great twist on my old standard spagetti. I feel so good about eating all that chard! I sauted the mushrooms and chard rather than cooking them in the sauce. And I used Tofurky Italian sausages instead of the tofu. Tasty. Also, the chard/mushroom/sausage mix was so much that I removed about a third of it before adding the pasta sauce to the pan. We'll use the rest of the mixture over rice at another meal, or non-vegans could have it with eggs for breakfast.
