Cheesy Broccoli Rice Casserole

What you need: 

1 stalk of broccoli, broken into little flowerettes
1-8oz pkg. or 1 cup of grated vegan cheddar cheese (also can use Soymage)
3 cups of cooked brown rice
1 can cream of mushroom soup or other creamed soup (check ingredients)
1 medium onion, diced
1/2 cup water
salt & pepper to taste

What you do: 

Preheat oven to 350 F.
In medium size pan pour in 1/2 cup of water and add broccoi and diced onion. Simmer over medium heat until broccoli is just slightly soft. Save water.
In a greased casserole dish, add cooked rice, broccoli, onions, and their water along with cream of mushroom soup. Mix well. May need to add more water if mixture is too thick. . Add salt and pepper to taste. Sprinkle grated cheese on top.
Put in oven and bake for about 20-25 minutes, or until knife goes through dish and comes out clean. This is unbelieveably delicious.:)

SO HOW'D IT GO?

Deeeeeeelicious. This was one of my dishes for our potluck-style Thanksgiving this year, and it was a huge hit with all the omnivores at the table. Used long-grain brown rice, a mozarella style vegan cheese, and added lots of extra garlic pepper and basil. Oh, and I used about three crowns of broccoli just because I love it so much. This dish is especially good if you brown the top under the broiler for a few minutes before serving. Yummy!!

I love this recipe! I have made it several times, I use flavored rice (such as rice a roni) and I also add cooked tempeh and it is delicious! Thank you for this recipe  :-*

delicious.
I used FYH chedder and creammy broccoli soup.
I did need to add more salt or some nutritional yeast.

I was frankly underwhelmed by this recipe. It might be due to some substitutions and the type of cream soup I used. But it was definitely lacking something. Maybe adding green lentils and some garlic?

I'd probably do this again but instead of the soup and expensive vegan rella, use a cheesy sauce that I know works: http://veganmeat.com/rec/augratin.html

I use this recipe, but reduce the oil.

When I was little, my favorite food was Rice-A-Roni broccoli and cheddar rice. For some reason I haven't gotten around to veganising it until today, and I've been vegan for 6 years. Anyways, I wasn't expecting this to taste like the boxed kind, because that stuff is so full of weird and strange sodium-filled ingredients. But it was really yummy! I kind of live in the boondocks and this was a midnight concoction, so I didn't have any vegan cream soups. I used around a cans-worth of soy milk, which I added to the cooking broccoli along with half a packet of vegetable soup mix. I also added the cheese into the mixture instead of putting it on top, because vegan cheese usually only melts for me when it's underneath and mixed into foods, never when it's sitting on top like in a pizza or casserole. Anyways, I topped the casserole with a generous sprinkling of nutritional yeast and paprika, which made it nice and pretty. Like someone else said, a little salt and pepper makes a big difference. Thanks, this is a great way to use up the leftover rice I'm always accumulating!

;D This was very very good. I doubled the recipe to make sure I had enough left overs for the week and it was perfect. My family and partner who are not vegetarians loved it! A bit of pepper once served goes a long way. I topped it off with french onions (the crispy fried kind that are used in green bean casseroles) MAN was that delicious.
Will be putting this in my recipe book just to make sure that I remember it. It seems to be a great crowd pleaser so I'm sure it would be wonderful for pot lucks etc.

This was good, but more like a side dish. I used broccoli and mushrooms, and then cream of broccoli soup. I also used nutritional yeast instead of cheese, because I don't like vegan cheese.
