Crazy Good Banana Muffins

What you need: 

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
4 bananas, mashed
3/4 cup white sugar
1/4 cup unsweetened apple sauce
3 tablespoons vegetable oil
1/2 cup chopped walnuts, optional

What you do: 

1. Preheat oven to 375 degrees Fahrenheit. Line 10 muffin cups with muffin papers.
2. In a large bowl, mix together flour, baking soda, baking powder, and salt.
3. In another bowl, beat together bananas, sugar, applesauce and oil.
4. Stir the banana mixture into the flour mixture just until moistened. Stir in walnuts, if desired.
5. Spoon batter into prepared muffin cups. Bake in preheated oven for 18-23 minutes, or until a toothpick inserted into center of muffin comes out clean. Do not over bake.

SO HOW'D IT GO?

Very tasty! The texture of them is just right. I followed the recipe exactly except added 1 tsp of vanilla to the wet side. Baked 20 minutes.

I think you could stretch the batter to a dozen muffins and be OK, but making 10 made them nice and big.

Ohhhh my gosh. These are the most AMAZING muffins ever! They're so unbelievably moist and flavorful. I'm in love and just gorged on six muffins (only got 8 total from the recipe). I did make modifications, though, so I'm not sure how the original rates. My changes: used white whole wheat instead of all-purpose flour, upped baking powder to 2 tsp (to compensate for the heavier flour), used 3 very ripe bananas instead of 4 (only had 3), used 1/3 cup of applesauce (I use those individual containers and didn't want to waste/have leftovers), added 1 teaspoon of vanilla extract to the banana mixture, and only used 1/2 cup sugar (and I'm glad I did, as it was super sweet already with the ripe bananas and vanilla). I also topped the muffins with oats, as previous reviewers suggested! Overall, super light, fluffy, delicious muffins that I can't wait to share with my family (uh, what's left of them, anyway).  :)>>>

hurray! these are great. easy and so good. i used the walnuts cuz i happened to have 1/2 a cup. mine are a bit too sweet for my taste but it's probably because i used sweetened applesauce. 5 stars :D

This muffin is the best thing I have ever baked! I made one with berry jam inside as a previous reviewer suggested. That one was the best!! I made 6 big muffins. For three, I followed the exact recipe, for the other three I used applesauce instead of oil to make them fat-free. They were just as good, if only a little more mushy in the middle, but just a tiny bit. I also put some cinnamon on one, and it looks really nice. I wish I had put oats on top of them to make them look more professional.

These muffins sre fabulous. i used 1/4 c oil and 3T rice milk to replace the applesauce. The muffins are slightly oily, otherwise they're fine. Also sprinkled rolled oats on 3 muffins, like what one of u suggested. Crunchy n look good but some came off. Maybe will try mixing into the batter next time.

These muffins were AWESOME! Very banana-ey and moist... I used 1/2 cup WW pastry flour and 1 cup AP flour and added some dried cranberries along with the walnuts... Yum  :)>>> What I loved also about this recipe is that I got to use up 4 browning bananas!

I made these just now for my sister before she went to school. They were so easy to make! I did make a few changes though:
1. I only used three bananas since mine were huge
2. I had to sub oil for the applesauce since I was out(which I increased just a tiny bit)
3. Used 3 T. plain soymilk with a bit of vanilla added instead of 3 T. oil

I split the ingred. in half and added some peanut butter to one half, and a little strawberry jam in the center of those before baking (since my sister likes anything with bananas, pb, and strawberry jam), and left the other half plain. We both agreed that they are absolutely delicious either way. And they were so moist! This recipe is definitely one I will be keeping!

They baked for exactly 18 minutes and came out perfect.  :)>>>

These were very very good. Incredibly moist and tasty. I added chocolate chips and it was the perfect Christmas breakfast edition!
