Dalida's Taco Salad

What you need: 

1 package burger-style crumbles
1 onion chopped coarsely
2 Serrano chilies
1 bag pre-washed romaine lettuce
1 pint cherry or grape tomatoes, halved
1/2 cup cooked corn
2 cloves garlic, chopped
1 avocado, sliced
1/2 cup vegan soy cheese, shredded (optional)

What you do: 

Heat up a medium sauce pan with extra virgin olive oil on medium-high heat and brown the soy crumbles for a few minutes...add the onion and Serrano chilies and brown for about 8 more minutes or until well-cooked. While browning you can add seasonings like taco seasoning, salt, pepper, cayenne, crushed red pepper to taste.
In a large bowl, combine chopped romaine, tomatoes, corn, garlic, avocado, soy cheese and choice of dressing. I like to use a mixture of olive oil, vegenaise (for creaminess), some Bragg's, lemon juice, curry powder and apple cider vinegar. Toss salad.
Pour soy crumbles mixture on top. It is complete! You have a delicious, zesty hearty salad!! Enjoy!

SO HOW'D IT GO?

This recipe was excellent but note that serrano peppers are quite spicy, and can be less spicy if you cook them a bit. Just an idea. Jar jalapenos are also a good alternative.

I didn't know what to make for dinner tonight and made this-- it was delish! My mouth loves it! I esp. love the apple cider vinegar and the intricacies of the spices and heat. Yummmm-O!

I absolutely *loved* this recipe-- very flavorful and spicy. You can adjust the spiciness depending on how many serrano chillies and how much garlic (yum!) you add and which spices and how much you use, i.e. cayenne, cumin, curry, crushed red pepper, black pepper, etc. The burger crumbles go so well with the creamy avocado and the freshness of the corn (I used raw corn instead of cooked!) and the burst of the fresh tomatoes. I love how you can vary the recipe...when I need a more hearty salad I use the burger crumbles and when I make a lighter salad I leave them out and just use tons of fresh veggies. I have made this salad a few times and all my friends love it just as much as I do, vegan and non-vegan alike. Haha, and it definitely does not *look* vegan and I've been vegan so long I don't think it *tastes* vegan but I think I've just gotten used to the taste of burger crumbles and soy.. ;) Anyways, we all love this recipe!It's A +!!
