General Tao's Tofu

What you need: 

1 (12 ounce) box firm tofu, in 1" cubes (frozen and thawed, if desired)
1 egg equivalent (e.g., EnerG Egg Replacer), prepared
3 tablespoons + 2 tablespoons water, divided
3/4 cup + 1 tablespoon cornstarch, divided
vegetable oil for frying + 3 tablespoons vegetable oil, divided
3 green onions, chopped
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon sherry, optional
red pepper, to taste
steamed broccoli, to serve

What you do: 

1. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.
2. Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 tablespoons vegetable oil in pan on medium heat. Add green onions, ginger, and garlic; cook for about 2 minutes. Be careful not to burn garlic.
3. Add vegetable stock, sugar, soy sauce, vinegar, sherry, and red pepper.
4. Mix 2 tablespoons water with 1 tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.

VeryVery yummy! I loved this so much but that tofu tasted bland so i drowned it in the sauce and i added more soy sauce and a little bit of orange juice from an orange....i dont understand though why you cover it with cornstarch instead of flour or something?

do you think potato starch will work the same way as corn stach?

So, uh.. This is basically the best recipe in the world.

I added broccoli and red and yellow bell pepper, doubled the sauce, and served it over basmatti rice.

This is the most awesome recipe! I double the sauce always.(sometimes the whole recipe) We sometimes change out the tofu to chickenless chicken from trader joes or quorn pieces or morning star strips but the original version is great. Also always add broccoli kids will always eat it with this! serve over basmati rice. Most requested recipe in our house. Even the meat eater visitors like this one!

I guessed on a few things and made a few changes to this recipe. Tofu at the grocery store I shop at comes in different sizes so I didn't know how big a "box" was; I used 10oz. I marinated the cubed tofu overnight in low sodium soy sauce. I eliminated the egg/egg replacer; the tofu was moist enough on it's own that the breading stuck to it just fine and did not clump in the pan when I fried it. I used whole grain flour instead of cornstarch and seasoned it with pepper and garlic powder. I also used the low sodium soy sauce and flour/water to make the sauce.

Healthy? Probably not so much. Tasty? Oh yea!  ;)b

I can't believe i waited so long to try this recipe!  It was so delicious!  Can't remember what General Tao's taste like from my meat eating days, but this dish taste like really great and healthy chinese food!  Very Yummy  ;)b

This sauce is really awesome! It tastes like real delivery chinese food! Although probably equally unhealthy with all the oil and sugar, ha. I hardly ever fry anything, and I found that piece to be relatively time consuming and annoying. So I think in the future I would maybe just brown the plain tofu in a little oil and then cook it all in the sauce. Maybe marinating the tofu in the sauce before-hand would spice it up a little more as it would lack the fried goodness!

For those that do fry it, I found that the tofu gets soggy in the sauce really quickly, so serve it up quick!
