Mango Lassi (or Mango Pina Colada)

What you need: 

2 cups frozen mango chunks (or mango sorbet)
1 cup coconut milk
soy milk (approximately 3/4 cup)
6 oz. pineapple juice (optional)
1 tablespoon lemon juice

What you do: 

Blend all ingredients, except soymilk, in a blender or other power mixer.
Add soymilk in small amounts until desired consistency is achieved.
Sweetener may be desired.
*Pineapple juice is optional and makes it more of a tropical shake than mango lassi.
