Oatmeal Breakfast Bars

What you need: 

2 2/3 cups oats
1/3 cup flax seed meal
1/2 cup dried fruit
2/3 cup chopped nuts (I use pecans)
1/2 tablespoons cinnamon
2 medium bananas, mashed
1 liquid egg replacer (I use Ener G)
1/3 cup canola oil
1-2 tablespoons agave nectar

What you do: 

1. Preheat oven to 350 degrees F. Grease a cookie sheet. Combine all the dry ingredients and mix well.
2. Add mashed bananas, prepared egg replacer, oil and sweetener and mix well until blended and mixture is sticky. Add water, as needed for a sticky consistency.
3. Shape dough into bars on prepared cookie sheet, making the bars about 1/3" thick. I would definitely recommend shaping all the bars at one time, because the longer the dough sits, the stickier it gets.
4. Bake for 15 minutes.
I make these for my husband in lieu of buying him store bought breakfast bars. They are healthier and cheaper.

SO HOW'D IT GO?

Mine are cooking so not sure on taste, although I can't imagine will be anything but yummy. I added all the stuff in pantry in way of dried nuts and fruits, plus coconut and a tiny bit of chocolate chips for that bit o chocolate I crave! I'm excited because I love bars like this but the ones in the store are either full of crap and made to look healthy OR the ones you know really are healthy are ridiculously overpriced. Thanks! You can play around with this for sure!

hey gang, i tweaked this recipe for those who wnat an easy cereal bar for breakfast that's super helathy:
1.5 bananas
1 1/3 oats
2.5 TB flaxseeds
1/4 C. raisins
1tb soyflour+1 tb water (egg replacer)
salt
cinnamon
1 tb sweetner (i used low cal maple syrup)

follow directions for the regular recipe.
shape into 10 bars (about 1/3 in. high)

each bar=95 kcal /3g fat/ 15 g carbs/ 3 g protein

great topped with pb (a slight amount of pb adds about 24 kcals and 1 g protein)

I made the mistake of not setting my oven temperature high enough (my oven is 40-50 degrees lower than it says it is), so I think that's why mine kind of fall apart (I could make granola out of them if I double-bake it, probably).

They smell absolutely delicious!!! I made some modifications.
I added extra:
- 3 tbsp soy protein powder
- 1 tsp soy lecithin (just had some left over I needed to use)
- 1 tbsp vanilla sugar
I modified:
- 1/2 cup Earth Balance margarine instead of 1/3 cup oil (this is probably good because EB has salt)
- 1/2 cup dried apple cut into bits for the dried fruit
- 2/3 cup unsalted cashews as nuts
- 3 tbsp raw agave syrup as sweetener
- the 2 bananas were well ripe

I also pressed them into a baking pan and cut it with a spatula when it was done. I haven't tried it yet, because I have it sitting in the remaining heat in the oven right now in an attempt to make them more firm, but I'll take pictures when I come back and do the *star rating.

Yum Yum Yummy! I was searching for a healthy bar for my bf for breakfast and I will make this all the time.  I used 2 tb of cocunut oil, 7 tablespoons applesauce, 2 tb maple syrup flax seed as eggs, raisins, sunflowers, walnuts.  They are a bit crumbly but thats totally my fault as I need to learn how to bake better!!  :D

I would put more raisins next time I like sweetness or some chopped dates, apricots...oh the possiblities...cranberries! mmm.

Thank you I'm making these for my best friend who doesn't understand that vegan eating can be healthy and flavorful!!!!!!!!!!  You know we all eat salad and grass  ;D

i enjoyed these bars very much.  i used cashews, dates,apricots and olive oil. i had no ground cinnamon but will use next time.  except for 2 tb of the ground flaxseed, i used wheatgerm instead.  i baked them in a tin and cut into bars while still hot.  for the record, not being vegan, i used 2 tb honey and 1 egg.  stored the bars in the fridge.  next time i'll use brazil nuts and dates only.  figs would be excellent too.  i recommend this recipe; it is ripe for experimentation.

Good stuff.  I replaced the eggs with "flax eggs" (flax seeds blended with water),  the flax meal with oat bran, and the oil with apple sauce.  Apricots and almonds were my fruit and nuts. Added a tbsp of maple syrup for sweetness, a little nutmeg for kick and soymilk for moisture.  Cooked em' in a pan for 15 mins, then sliced them into 12 squares and put them back in the oven for another 5.  They're a little chewy, but sooo much better than anything you'd get in a store.  LOVE the walnuttiness.  And I love the versatility of this recipe.  Might try prunes or apples next time.

I just made these, I didn't have flax meal so i used ground up sunflower seeds and chopped apple for fruit and whole sunflower seeds. They taste kinda funny, maybe because of the ground sunflower, not the right flavour.. and a little soggy on the bottom. baked in a pan for 20 minutes. Any suggestions on making them all around crispier? Also I used rolled oat, in the picture they look like some other oats. specific kind?

I was looking for a 'breakfast' I could take the gym and this recipe had very similar ingredients to the muesli I like so I thought I'd try it. It was really easy and pretty tasty. I like the slight moist, chewy texture. You could muck around with this recipe a lot and it would still taste good. I used LSA instead of flaxseed and like others I only used a tiny amount of the recommended oil. I reckon coconut and tahini would be good in this too.

Since I found this recipe I have made a new batch as soon as the last batch is finished being eaten! These are a great nutritious snack, I usually use sunflower seeds and dried cranberries and raisins. I skimp a little on the oil and they turn out just fine. I usually get 15-18 bars.

i replaced the oil with apple sauce, used raisins for dried fruit, used chopped almonds & sunflower seeds, and used a maple-flavored stevia syrup for the sweetener. these are yummy and make a great protein-filled breakfast! however, i think i will bake them a bit longer next time as i think i would prefer them crunchier. i plan on adding in dried cranberries & shredded coconut next time around. this recipe will be fun to experiment with!  :)
