Outstanding Cheezy Potato Bake

What you need:

oil, as needed
6 small-medium red potatoes, sliced in 1/2" rounds
1/2-1 yellow onion, sliced
vegan buttery spread, to taste (I use Earth Balance)
salt and pepper, to taste
1/2 cup nutritional yeast
1-1 1/2 cups unsweetened nondairy milk or water

What you do:

1. Preheat the oven to 450 degrees F. Prepare a casserole dish (I used an 8x8" glass pyrex) with oil to cover the bottom. Set aside. Add 1 layer of potatoes to the bottom of the dish (I used 2 potatoes per layer, for 3 layers).
2. Add some sliced onions to the top of the potatoes, season with lots of salt and pepper, and add a few dollops of vegan butter on top of the layer.
3. Add the nutritional yeast to a bowl, and pour in enough milk or water (I used a mixture) to make a sauce (medium thinness). Season this with salt and pepper. Pour some of the sauce over the first layer, but remember you need enough for 3 layers.
4. Continue to layer the dish with potato, onion, salt, pepper, vegan butter, and cheezy sauce. You should have enough sauce to pour some on top. I recommend lots of onions on top because they brown so beautifully. Make sure you season with enough salt and pepper!
5. Pour some milk in the dish to about 1/2 up the dish. Bake for 45 minutes-1 hour (until the potatoes are very tender, and the sauce is bubbling).
Honestly, we could not tell any difference between this and the au gratin potatoes of our past.

SO HOW'D IT GO?

This was... fanTASTIC!!  :D I... ate about half of it in one sitting. This was so friggin' good... definitely not enough sauce, though - 1/2 cup of nooch? Pah! I'll drown my tatoes in sauce next time, for sure, and maybe add something green.

I can't wait to make this again!

This is killer good!!! :D I was skeptical because of the nutritionl yeast, but it is very tasty. I also added paprika. Next time I may add some garlic to it.  Thanks for the recipe.

I used to absolutey HATE augratin potatoes when my mom made them. THey tasted like throw up to me (literally). Do you think I will like these considering that? Do they have that barfy taste?
I like a  lot of vegan versions of things I used to hate, so I guess I just need to try it...will review soon!

I hated au gratin potatoes as a kid too, they really do taste like barf!! I haven't made this recipe, but I have made two other similar recipes and they are GREAT (no barf taste!). I say go for it :)

p.s. I just added this of my list of things to make

I'm glad someone understands what I'm talking about! Barf in the back of your throat kind of burning barf.

I liked this recipe though! But I had to use wedges instead of rounds to not remind me of the barf.

This is my first review - I've only adopted a vegan diet a few months ago and my husband about a month ago after two stents placed - and me saying that's it!  ;)b

I made this for my husband and threee (omni) sons and they scraped the baking pan literally clean - even fighting over the last bits! I would say make sure to add enough soymilk or whatever (I think I had rice milk). None of us could believe that this really really REALLY tasted cheesey!!

Great job!

Excellent recipe! By adding the flour and paprika it's what I remember my Mom making.  Thanks!
