Real-tasting Mayonnaise

What you need: 

1 tablespoon ground flax seed
3 tablespoons water
1 teaspoon salt
1 teaspoon sugar
1 teaspoon ground mustard
dash cayenne
1 1/4 cups oil, divided
3 tablespoons lemon juice

What you do: 

1. Combine the flax seed and water; microwave 10 seconds, then cool to room temperature
2. In a blender (or preferably with a hand blender), combine the flax seed mixture, spices, and 1/4 cup oil.
3. While mixing, slowly add another 1/2 cup oil. Continue mixing, and add the lemon juice.
4. Still mixing, add the remaining 1/2 cup oil. Store in a jar in the fridge.

SO HOW'D IT GO?

I have tried several recipes for mayo and I like this one the best. It's the closest to Veganaise. Next time I am going to try shellylovesmoo's suggestion and use Energ G just to see how it turns out. Thanks for a great recipe!

;)b awesome! i made my own mayo! yay! thanks for this recipe, what a money saver. it taste just like mayo, i tweaked it a bit though. I did 2T of apple cider vinegar instead of 3T of lemon juice and i added a splash of plain soy milk, onion and garlic powder and already prepared mustard instead of ground.

Wow. Why have I been buying veganse? This is so easy, and really tasty. I used only 3/4 cups of canola oil, the juice of one smallish lemon, and spices as written. I can't wait to play with the spice - add some garlici, dill, etc. My flax seeds showed up too - it's kinda brown, but who cares if it tastes good?! Very thick and yummy! Thanks.

Came out very good and thick. I used a hand blender and it was too thick, so I added some water. I am going to share this with my vegan cooking class in Dec. Thanks for a good recipe.

Wow! Tastes just like the real thing (from what I remember). My flax wasn't quite ground fine enough so there were flecks in it, but that's no big deal. I did cut back on the lemon juice though because after adding about a third of it, I tested it and it was just perfect at that point. I mixed it with my hand mixer using the whip attachment with no difficulty.  Definitely my go-to recipe for "mayonnaise".

try adding cornstarch and i liked the mayo but could taste the flax seed so i replaced it with ener-g egg replacer

I made this, but i used sunflower seeds instead of flaxseeds and it tasted like the ogranic mayo i have bought I also added apple cider vingear because im used to that type of taste. It is easy and i had no problems with it.

The key is to add the oil as slowly as possible while blending! Taste and texture were great
