Reubenitos (Sauerkraut Quesadillas)

What you need: 

2 large tortillas
1 teaspoon Dijon mustard
4 slices vegan cheese
4 slices vegan turkey (I use Tofurkey)
1/2 cup sauerkraut, drained
1 handful spinach
hot sauce, to top

What you do: 

1. Spread mustard over the tortillas.
2. Lay 2 slices vegan cheese on each tortillas then vegan turkey.
3. Sprinkle on sauerkraut, then spinach. Fold over.
4. Grill/fry in skillet/microwave them until hot, as you would a quesadilla. Top with hot sauce or vegan sour cream.
Source of recipe: Cleaning out the fridge resulted in these tasty little triangles.
