Spicy Mexican Lasagna

What you need: 

refried beans
corn or flour tortillas
salsa
2 onions
tomato paste or diced tomatoes
6 cloves garlic
chilli powder
fajita seasoning (black pepper, salt, coriander, cumin, oregano)
bell pepper

What you do: 

Preheat oven to 400 degrees f.
Heat a pan and saute one onion till translucent and the bell pepper only for a minute.
If you are making home made refried beans cook beans ahead of timemix together garlic, one onion, tomato paste or diced tomatoes, chilli powder, and fajita seasoning into the beans.
Pour salsa onto bottom of lasagna pan.
Put a layer of tortillas over salsa (layer real good so it covers whole area of pan)spread an even layer of refried bean mix over the tortillas.
Put onion and bell pepper mix on top of that.
Add a layer of salsa then put another layer of tortillasrepeat till beans and veggies are gone.
If you don't use a spicy salsa you may want to add a red chilli or add some red pepper flakes.
Any veggies would be good in this so use anything you would fancy.

SO HOW'D IT GO?

This was pretty tasty!  I added some shredded vegan cheese and soyrizo to each layer.  I used both enchillada sauce and salsa, as I didn't have enough of just one of them.  Topped with guacamole and vegan sour cream.  This recipe lends itself to lots of alterations.  I will definitely make again!  ;)b

This was pretty good, I was having a mexican food craving and it did the job. I added a layer of tvp cooked in some vegan taco seasoning, and a layer of the basic cheese sauce recipe that was suggested. I served it with some homemade guacamole and vegan sour cream. Next time I think I will omit the tomato paste and add some chipolte peppers to the beans. Thanks for the recipe.

This was great! Very simple, and you can modify it to what you have in the pantry. The bean mixture was really good. I had some veggie ground beef crumble, so I mixed in some spices and made that a layer as well. Topped it with some vegan cheese and presto! Yum. Recipe doesn't say how long to bake -- mine was in for about 13 minutes. Just keep an eye on it.  :)

YES!  this is exactly what i was looking for for dinner, it was awesome and super easy.  my boyfriend is away and i wanted something filling yet easy to make with not lots of dishes.

as i went along i realized that i didnt have all of the ingredients (like peppers and tomatoes) but its still good.  mine is pretty much an onion/bean lasagne.  yum  still good!  i did add in leftover cheese, the recipe is on my blog, www.livejournal.com/users/vegancookery.  that certainly was a good filler!  yum!
