Spicy Okara Stir Fry

What you need: 

1 Chopped Onion
4 to 5 Chopped Garlic cloves
Olive Oil
Soy Sauce
Salt + Pepper
Hot Sauce (optional)
2 to 3 Cups Okara (leftovers from making soy milk from scratch)
Steamed Rice

What you do: 

This is a good use of the leftover okara whenever you make soy milk.
Cover bottom of frying pan with olive oil.
Add onions and garlic and cook on medium-high until lightly browned.
Add Okara to the pan and mix well.
Pour in soy sauce until the yellow color of the okara turns dark.
Add a bit more olive oil and salt and pepper. Add hot sauce if you want it spicy.
Cook 15-20 minutes and serve over rice.

SO HOW'D IT GO?

This recipe is quite good!  I varied it a bit by adding carrots and thinly sliced ginger strips to the stir fry.  Was out of olive oil so I used vegetable oil. Delicious!  Thanks.
