Sweet Potato Cakes

What you need: 

2 medium sized sweet potatoes, peeled and quartered 1/4 cup oat flour 1/4 cup panko bread crumbs 1/4 cup onions, finely chopped 1/4 cup zucchini, shredded and squeezed dry salt and pepper, to taste 1-2 dashes ground cayenne 1/4 cup cooked corn, drained

What you do: 

1. Cook sweet potato in boiling water until tender, about 20 minutes. When the potatoes are done, mash them in a medium sized bowl. 2. Add the oat flour, panko, onions, zucchini, salt, pepper, and cayenne. Fold in the corn making sure the kernels stay whole. 3. Using cooking spray on a nonstick skillet, cook on medium heat about 4 minutes on each side. Source of recipe: Always looking to use up leftovers, I came up with this.

Looks so yummy! I want to try cooking this since I love potato so much especially it is made as a cake. Thanks for this delicious recipe. :)

I just made these and because I don't like mashed tubers I only used 1 sweet potato....hoping it'd come out NOT like a ball of fried mashed potatoe.  It did.  I mean it's good but I think next time I will use 1 potato and double the amount of the zucc and onion.  Probably not the corn as I also don't really like corn.  I wanted something with a bit more texture is all.

These were good. Yummy flavor. A bit soggy on the inside, I may add a bit more bread crumbs next time, but I will make them again. A good kid-friendly meal.
