Tahini Couscous with Vegetables

What you need: 

2 cup water
2 1/2 tablespoon tahini
2 cloves garlic, pulverized
1 baby courgette (zucchini) halved lengthwise, then sliced
2 stalks celery, sliced thin
4-5 large crimini mushrooms
1/4 cup finely chopped green onion
1 cup couscous
1 tablespoon lemon juice

What you do: 

Bring first 5 ingredients to a boil in a medium saucepan, lower heat, to a high simmer for about 3-4 minutes. Add mushrooms, and green onion, and simmer for another 2 minutes. Add couscous and lemon juice, stir constantly for 1 minute, remove from heat and cover. Let stand for 10-15 minutes, fluff with fork and mix well, and serve.
Stands well on its own as a full dinner, or as a side dish.

SO HOW'D IT GO?

in response to the above comment, i do peanut butter in couscous for breakfast with either apple or banana and its delish...im going to have to try the tahini with the veggies in it for dinner tho, thanks!

Brill recipe. Great to put in loads of different veggies: anything you've got left over in the fridge. I put in lots more lemon juice.
Next time, I think I'll try it with "old fashioned" peanut butter instead of the tahini: what do you reckon?
