Tapioca Pudding

What you need: 

1/2 cup tapioca pearls (not instant!)
3 cups nondairy milk (I use soy)
1/2 cup sugar
1/2 teaspoon vanilla

What you do: 

1. Soak tapioca pearls in 2 cups water for about 1 hour. Drain.
2. In a medium sized saucepan, combine tapioca, milk, and sugar. Stir the mixture over medium heat for about 20 minutes until thickened to pudding-like consistency.
3. Add vanilla and stir. Allow to cool, then chill and serve cold.

SO HOW'D IT GO?

If you like a bowl of nubbly slime with the consistency of industrial glue and no detectable flavor whatsoever and bearing no resemblance to pudding, let alone tapioca pudding, then I say go for it.  Because that's what I got.

This recipe is fantastic!!!! yum!
I used vanilla almond milk (which is I think slightly sweetened already) and some agave - more like 1/4 cup. Very easy to make and I am so excited because I love tapioca and now I can make it vegan at home! yipee! Thanks!

just made this with some vanilla soy milk, and used a little under 1/4 cup of raw turbinado sugar.  nice and gooey texture, like an elephant sneezed in my bowl.

I"ve made this several times and it's perfect - simple, easy, yummy. I've also tried it with coconut milk (half milk, half water, since it's so rich), and that gives it a yummy coconut flavour! Very rich - only need a small serving!  ;)

I only added 2 c of rice milk as the tapioca seemed very runny. After cooking for 20 min and then cooling, it still wasn't as thick as I would have liked.  I changed up the vanilla extract for almond extract making for a great combination with chocolate.

I missed tapioca pudding! This is delicious. I use 1 cup of coconut milk in replacement of a cup of the soymilk, I've also used agave (1/4 cup) instead of the sugar. Found this recipe a week ago and have already made it 3 times!

any way to replace the sugar with something healthier {example fruit juice,etc} without ruining the recipe?

I made this for my husband, as I am not truly a fan of tapioca.  However I am eating it right now, still warm and it is good!  A little to sweet for me, maybe because I used vanilla soy milk, however I know my husband won't mind the sweetness. Next time I will cut it down a little bit but this is definitely a recipe I will make again and and again.

I haven't had tapioca pudding since I was little!  Our family is allergic to eggs, dairy and we are gluten intollerant.  So what a treat to bring back some tapioca pudding!

I made it with small tri-coloured pearls, so it was very pretty.  The only thing I will change for next time, is use 1/4 cup less sugar.  Our soy milk is already so sweet, that I found this dessert too sweet for me.  (although, not an issue according to the kids!)
