Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

I tried this for a this for a third time, but this time I made some changes. I still used 1&1/4 cup soy milk. I used whole wheat flour and turbinado sugar, in the same amounts listed. I used applesauce instead of oil and I used 1.5 cups of blueberries. I cooked them at 350 again, but this time they were still very liquid after 15 minutes, so I baked them for 30 minutes total. They are really good this time! Still just as simple to make, but healthier and yum. They aren't dry inside at all.

these were great! it made 31 mini muffins, and they were ready in only 10 minutes. they puffed up to twice the height of the tin. the only change i made was that i subsituted half the oil for applesauce. they were so easy and quick, i will definitely make these again. if anyone else was wondering, for the 31 mini muffins i made each is about 50 calories. YUM!

These were just alright for me. I've made them twice, both times in a mini muffin pan, and neither time was quite right. The first time, I made them by the directions exactly, and the batter was WAY too dry(hard to even mix in the blueberries). They were starting to burn on the outside by the time they were done on the inside. I baked them for about 17 minutes total on 400. The second time, I added 1&1/4 a cup of soy milk and the batter was perfect. I baked them at 350 for 20 minutes and they were done, but not as moist as I'd like, so maybe I should have baked them for a little less time. The flavor was on the bland side. The kids loved them though, so I imagine I'll be making them again. For the amount of time and effort, they're probably worth trying out.

these muffins were fantabulosa! thumbs up from my omnivore boyfriend and my vegan baby! über easy to make and delicious. i quietly slipped in two tablespoons of ground flax meal...boyfriend would surely wrinkle his nose if he knew they were a little "healthy".

kylissa's photo makes me want to go bake some of these! yummy!

try tossing the blueberries in dry flour to coat them so they don't sink. then mix in the wet ingredients to make the batter.

Just wanted to say i tried this recipe, Only had enough ingredients to make 2, haha but they were amazing! Great recipe, really stuck to the paper cups though, but I liked them and so did my mom (:

The only substitution I made was using half a cup of coconut flour (and whole wheat pastry flour for the remainder) and the batter came out sooo thick, more like cookie dough (although I did not have the problem of the blueberries sinking). I even added more milk but it was still very very thick, too thick to be "poured" like the recipe stated. I had to spoon it into the muffin tins. My daughter is eating her second one as I write this so they must be good, unfortunately I cannot eat any yet as I am fasting for a few more days, but they sure smell great. I wonder if everyone else's batter is this thick?

the thing i love about this recipe is that its a perfect plain muffin base, you can add pretty much anything you want. i nixed the blueberries and added:

1 cup diced plums,
1 tsp cinnamon
1/2 tsp ground ginger
and a dash of allspice.

they were awesome! ive made them with blueberries and apples before too. they always come out perfect!

I just made these for breakfast and they turned out sooo good. I like how the recipe is easy and includes stuff I always have in my kitchen. For some reason mine were done in about 18 minutes though. I will be be using this recipe alot in the future.. :)
