Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

WOW I can't keep my hands off of these muffins. Is eating 7 in 2 days bad? Hehe.
I made these with wheat flour and brown sugar and frozen wild blueberries, and skimped on the oil. Simple and wonderful and yummmmmy!

I made these, and they turned out wonderful!
I added a little bit more blueberry, though,
so they turned out to be almost completly purple. :p

Wonderful! Simple to make!  I subbed a 1/2 of rolled oats for some of the flour. The outside was firm, but the inside was soft and moist.  My new recipe for making muffins.

Great recipe.  Sweet but not too sweet!

Be sure that the blueberries are in the middle of the dough or they leak through the paper muffin cups.  These are very easy to make and delicious. Thank you.  I will make these often even if I have to use frozen blueberries in the winter.  could probably use strawberries or other berries with the dough and would be delicious.
