Warm Artichoke Sandwich

What you need: 

1/2 can artichoke hearts (about 4 or 5 hearts!)
bread of your choice (I like Trader Joes Cracked Wheat)
Vegenaise (vegan, and delicious!)
Trader Joes Dijon mustard (vegan!)
1 tablespoon Earth Balance Buttery Spread (vegan!)
1 teaspoon nutritional yeast

What you do: 

1. Drain some of the moisture from the artichoke hearts in a colander while melting the Earth Balance in a pan.
2. After the Earth Balance is melted, sprinkle in the nutritional yeast and mix (this substance will look flaky -this is OK!)
3. Sauté the artichoke hearts - turning once or twice. Make sure the Earth Balance/yeast mixture gets onto the hearts!
4. Toast (or don't!) the bread. Spread on Vegenaise and a bit of Dijon. Pat the artichoke hearts with paper towel to remove some of the moisture. When they are ready, stack on the bread and you are done!
This recipe is also good with additions: spinach, roma tomato, or your favorite topping. Enjoy!

SO HOW'D IT GO?

delicious! i added some spinach and tomatoes, and used a little extra mustard, definitely filing this recipe in my favorites!
