Yes... My husband bought them and now I'm not sure that he checked the ingreds... I was just thinking dark chocolate, I'll check the next time I'm in the store, it's a local HFS, so it wouldn't help you anyway, I suppose. They were damn good, though! I've been making use of the kaluha in white russians with hemp milk... divine!

I checked, they are vegan, Sunspire brand, grain sweetened so there is also no sugar.

I want to make some to take to Faire this weekend. I have some vanilla w/ chocolate chips left over and a whole batch of chocolate buttercream. What should I make to put under the choc frosting?
I will also be taking Lemon w/ lemon buttercream and Margarita.
I have also been kicking around the idea of making vanilla cupcakes and adding a cinnamon type booze like Goldshlager (sp?). What do you cupcake gurus think?

I really like the chocolate cupcakes from this book, so I'd recommend those for the chocolate frosting.
As for the vanilla cupcakes with booze... it doesn't really make much of a difference if it's in the batter, but if you replace the soymilk in the buttercream frosting with kahlua or amaretto or even goldschlager, it kicks it up a notch. Play around with it, and don't be afraid to try something outside of the box!

I recently made the Banana Split Cupcakes again, and I cannot stress enough how wonderful these are!! They also make a great presentation with their swirly mounds of buttercream frosting, drizzles of chocolate ganache, and toppings of chopped walnuts and colorful sprinkles. Soooo good!

Has anyone tried a frosting for the mucho margarita cupcakes? I don't have my book with me, but from what I remember they recommend a glaze right? Me thinks the omnis woul dbe more likely to try them if they have fluffy frosting. Bonus if it's green! (Irish event) I might just try a limey buttercream.

theres actually a frosting/glaze recipe in the book meant for those cupcakes.. it has tequila and lime juice/zest in it and the omnis that i served them too were eager to try them (and they loved them) even without a big swirl of frosting to catch their eye.

Thanks- I realized that after I got home & looked at my book. Thats the trouble with thinking about cooking while at work. Did you put salt in your frosting?

it's been awhile but im pretty sure i did. maybe put salt in half the batch of frosting since some ppl dont like salt rims on their margaritas..?

I just made the apricot glazed almond cupcakes and they are delicious! I love that there isn't a heavy, fatty frosting on these. I just ate two and I don't feel guilty! I will definitely be making this again

I've been afraid to make any mini cupcakes yet because the baking time seems so precarious - can anyone tell me how long I should bake them?

i bake them for a little less (about a minute or two) than the suggested time. i think a few times ive done them for the lowest suggested time and theyve come out fine. mini cupcakes are the best!

I think if I could marry a cookbook, I would marry this one. And I hear that Isa and Terry are working on a cookie cookbook. Can't wait!
Anyway, it is my goal to make ALL the cupcakes in this book. So far I have done Peanut Butter Chocolate Heavencakes,Chocolate Orange Cupcakes,Cookies and Cream Cupcakes (with Mint Newman Os),Pineapple Right Side-Up Cupcakes,Chocolate Mint Cupcakes,S'mores Cupcakes,Pumpkin Chocolate Chip Cupcakes,Mucho Margarita Cupcakes
I also did my own creations and made chocolate cupcakes with chocolate buttercream filling and chocolate ganache topping for Triple Chocolate Cupcakes. I also experimented and made Golden Vanilla Cupcakes with chocolate buttercream filling and chocolate ganache topping and those were wonderful as well!
I've had NO problems with any recipes and I've adored all the flavors I've tried so far. My least fave was probably the cookies and cream. I didn't dislike it, just didn't like it as much as the others. Probably coz I'm not the biggest fan of buttercream frosting in large quantities and I think I put too much on. I want to try them again, but make the mint icing instead and put the crushed up Mint Newman O's in that. I think that would be to die for!

I don't want to use regular buttercream because I don't think that flavor would mesh well with the apple cider, but I can't just leave them naked! I am thinking of maybe just dusting them with powdered sugar & cinnamon, but I'm afraid that will be boring. I've planned on trying these since I got the book TWO YEARS ago, and really thought I'd love them. I think the cupcakes on their own are okay (not great), but I certainly do not like them with the glaze... Any suggestions? Maybe I can make a caramel sauce to drizzle over them?

Yeah, you could do the caramel..or you could do the brown sugar syrup in JOVB...it's good. You could even make it thicker for a glaze.

I made the Caramel-Penuche frosting from Veganomicon. It was very good, and saved me from the Brown Rice Syrup mess!

question to those of you who have one or both of the following.. cus i havent made either.
i want to take some cupcakes on my flight but i want to avoid frosting cus they'll get squished in a ziploc container. i was thinking of making the pb cupcakes and instead of doing the ganache doing the cocoa crumb topping from the stout cupcakes.
should i do it or just stick with the ganache?
or should i just do the stout ones with the topping?

Yeah, you could do the caramel..or you could do the brown sugar syrup in JOVB...it's good. You could even make it thicker for a glaze.
