Banana bread question - Quick response please!!

Can you use frozen bananas (thawed) in banana bread recipes or does it always need to be fresh? I don't like to keep fresh bananas around too long because it attracts fruit flies so I usually freeze as soon as they are ripe. Does anyone have success using frozen bananas?

my dad makes banana bread constantly and almost always uses frozen super duper ripe bananas. I'm pretty sure he defrosts them first though.

Stupid question: do you need to take the bananas out of the peel in order to freeze them or can you just put them, peel and all, into a baggie and then freeze?

you can freeze them either way.
if they are still unmushy and can be peeled w/o turning to a globby mess in my hands, i will unpeel and then put in a baggie into the freezer.
if you leave the skin on and freeze, the defrosting process can get a little messy.

Thanks LA - I think I'll try peeling before freezing!
i think they are pretty easy to peel when frozen. i let them sit for a couple minutes and slice the skin with the knife the long way and then cut them into disks. the peel usually just pops off then. but my freezer burns everything so peeling isn't really a good option. :(

i always freeze my fingers and get em all sticky. and i never can seem to get the skin to peel nicely from the 'nanner. i get that weird "middle endo-dermal flesh bit" stuck to the fruit.
many a disaster has been created. :-\
I freeze them in the skin. I figure, it cuts down on the mashing. Thaw them in a bowl on the counter, and just squoosh them out of the skin when I'm ready to start. The bowl catches any juice that will drip out when they thaw. Banana soup! LOL
