how does one eat pumpkin? I was thinking about just opening a can and heating it up...do you think that would work?maybe if I burnt it a little? I want to maintain the healthiness of the gourd-so I wont be adding marshmellow topping to it even though that would be vegan and potentially yummy. Other ideas?
A touch of earth balance a spoonful of agave nectar would be yummy. You can make pumpkin ravioli or pumpkin soup also. A couple of days ago I made some pumpkin icecream and that was yummy though not the healthiest indulgence w/ all the coconut milk :)

I love it in my oatmeal, with raisins, cinnamon and allspice.
It's also good made into a curried soup with some carrots, onions, veggie broth, and a sprinkle of nutmeg. Mm..comfort food.

I'm eating this as we speak...er, as I type...I didn't realize pumpkin as so bitter alone... :( its probally not healthy anymore...I added like a tablespoon and half of sugar to it... :-\ GERRRR maybe my body is just opposed to healthfulness!
In waffles! I just scoop a spoon in with some waffle mix, a hearty spoon of pumpkin pie spice and five minutes later you have pumpkin-y goodness without having to bake stuff.
My brother also makes a mean pumpkin -chip muffin!

Ingredients:
2cups Fresh or Canned Pumpkin
2cans Red Kidney Beans
2 Medium Onions- chopped
3 cans Cut Tomatoes , 15 ounce
2 tablespoons Chili Powder
1/4teaspoon Red Pepper(Optional)
2 tablespoons Sugar
1 teaspoon Salt
2 Bay Leaves
1 cup Mushrooms(optional)
Preparation Directions:
3. Add each ingredient into the pot.
4. Cook on low for one to two hours.
5. Serve with crackers.

I thought I was ever-so-clever when i started making pumpkin pancakes from scratch to mimic the ones I had at IHOP! :P yum yum yummy! with blueberry syrup!
oh, adamcrisis...this Idea of chili is a good one....cause the pumpkin would lend itself very nicely to the spiceisity of the dish :D plus, nobody woulda ever had it before so they could no how its supposed to taste! Im printing teh recipe now... ::)

the recipe I found called for ground beef (hence missing steps), but extra beans or maybe some tempeh/soy chorizo or something would be tasty Ill bet
Pumpkin chili is delicious! I don't use a recipe, though. And I always add chopped zucchini and black beans.
an alternative to adding marshmallows to sweeten the pumpkin is to dot the top of the mashed w/ bananas. supposedly its tasty, though ive never tried it.
cant you use it pretty much in place of, in any sweet potato or wiinter squash recipe?

Ooooh, I eat pumpkin at LEAST 4 or 5 times per week for breakfast. I take one small can of pumpkin, a block of soft tofu, about 1 tsp each of cinnamon, ginger, and nutmeg, a sguirt of agave nectar and a splash of soymilk and then puree it all together in the blender. I then put some in a bowl and sprinkle a little ground flax, a few raw almonds and sunflower seeds, some hemphearts and last I sprinkle on some type of raw grain(lately it's been triticale flakes). This is my FAVOURITE breakfast ever and the amount of pumpkin puree is enough for 3-4 servings. If anyone makes this you might want to lessen the amount of spice though (I like it strong).
This was written for raw pumpkin or winter squash but you could fry up the onion etc. and then add your pumpkin puree and season well.
I'd appreciate an opinion on it. I made up the recipe mineself.

theres a recipe on here called something like chocolate pumpkin amazingness.. i added it to my recipe box but haven't made it yet. it sounds super good. if you try it let us know how it turned out!
now I'm wondering what a good/the best pumpkin soup recipe is here... I'd love to give it a try. any suggestions?

totally nvr, have any of you tried "good karma" ice cream? i almost bought the carrot cake kind last night but i decided to get road end's nacho chreese dip.
We have some of that very flavor of that very brand in our freezer but we haven't tried it yet. :)

Take a whole pumpkin, preferably a dark green one, brush it with oil and roast it for an hour or two. YUM.

Discipline... Hi, my name's Elaine and I'm a sweet-aholic. We have recently polished off a carton of Peanut Butter Zigzag (Purely Decadent) and I try to stretch out the times between ice cream fixes. Have no fear, it WILL be eaten. I kinda like knowing it's there. The anticipation is sometimes better than the "event" (like Christmas). :D
