Ch-easy grits or polenta

When I was a kid, mom and gramma made a dish with Quaker grits. It had a whole stick of butter, several eggs and oh I dunno, a half ton of cheese? It was good, but face it...not only is it not vegan it is really not very good for you.
Going to experiment with stone ground organic polenta from the HFC, NY, creamed silken tofu, the garlic of the original and some EB. I figure, it can't be bad.
Also, anyone else fond of arborrio rice baked in the oven as risotto and topped with shreds of steamed kale and NY? I could live on that.
OMG, I just made cheezy grits yesterday! I had never had grits before, although I have had polenta (not the soft kind, but the firm baked or fried kind). My cheezy grits were marvelous!! I used just regular grocery store Albers Quick Grits. I made one serving and then mixed in some Incredible Cashew Cheez Sauce (very similar to your Uncheese) that I had leftover from making the Tuna-Free Melts from Vegan Vittles yesterday. I also added a bit of Earth Balance margarine. This was so quick and so delicious! I'm definitely going to be making this regularly.
Oh, this sounds so good! I love grits & polenta, but have never had them 'cheesey'...will have to give that a try! :)
