a cool bean recipe

last night, during my hours of solitary confinement...I mean, at work....i decided to eat a second dinner-- or was it third dinner? (apparently I'm a hobbit now...) at any rate...theres not much int eh way of vegan cuisine here but last week I notice their refried beans were vegan--- and we happened to have the blue bonnet light margarine...so what did I do
I made a grilled frijolies sandwich, YO!
Slather some marg on one side of a piece of bread...slap some refried beans on the other side...grill it bean side up while you slather marg on one side of another piece of bread...cover the refried beans and flip the sandwich to grill the other side...really quite yummy.... ::)

Good idea, I get something like that at the Mex place I frequent. Add pickled jalapenos and some avocado and you have something near Nirvana.
I like the idea of just beans and bread though when I am in a hurry. I bet it would be yummy on a panini press.

blue bonnet light margarine is vegan? really? I should look for it - I can't find EB or smart balance light or anything, anywhere.
