Sweet Potato Puree with Bananas and Buttered Pecans from Food Network (The only change I make is to use Earth Balance margarine instead of unsalted butter. It's a good idea, then, to omit the salt or greatly reduce it as the Earth Balance is plenty salty.) http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_13271,00.html
Iced Pumpkin Cookies from Allrecipes (Of course, I make the necessary adjustments to veganize this. I sub 1/4 cup applesauce + 1/4 cup Earth Balance margarine for the 1/2 cup butter. I sub egg replacer for the egg. Instead of using all regular white sugar, I use 1/2 cup brown sugar and 1 cup regular. I also use around 1/2 teaspoon extra cinnamon. I sometimes use a combo of all-purpose and whole wheat flours, rather than only all-purpose. In the icing, I sub Earth Balance margarine and soymilk for the butter and milk.) http://allrecipes.com/Recipe/Iced-Pumpkin-Cookies/Detail.aspx
Cabbage, Onions, & Potatoes (I don't usually use a recipe. I just saute some cabbage & onions in olive oil with salt & pepper until soft and golden. Then, I stir the cabbage/onion mixture into some mashed potatoes with a little Earth Balance margarine. I eat it like this, or sometimes I spread it in a pan & bake it first.)

Roasted butternut squash with garam masala
Where can I find garam masala? I've seen it listed a few times, but not exactly sure what it is...a spice mixture, right?

They also sell it at Whole Foods in the spice section - it comes in a glass jar, not too pricey - I think it was around $4-$5??

You can get recipes for blending your own garam masala off the Internet or from any book on Indian cooking. For example a friend of mine really hates cardamom so she makes her own blend without that.
I love cooking soups and baked stuff because here in the summer it's waaaay too hot to run the oven! Nut roasts, here I come!

I get it at one of the ethnic stores. I think I paid $1.50 for some where near a lifetime suplie :D It's like that with all of the spices there though. I can get a pound of coriander for $2. :o
