Get well soon menu?
Hello all. My mom is going in for surgery tomorrow :( She is going to be off her feet for a few weeks. Since my dad doesn't cook, and I can't believe they will order take out for two weeks, I'm going to do a bunch of cooking for my mom. I'm starting tonight and I want to make at least a weeks worth of meals that will sit well in the fridge or freezer so my dad can just heat them up. Can you help with suggestions? They are not veggie but I know I can make some healthy foods they will both like and won't miss the meat. It can't be anything with just tofu or my dad won't touch it. Here's what I have so far:
Tofu and spinach quiche (I made this from this site once before and my dad never knew it was tofu
Veggie chili (ditto)
Butternut squash soup (one of my mom's favorite)
Maybe some blueberry muffins or fruit salad for breakfast or snacks
Veggie lasagna
Any other suggestions? Thanks so much for your help!!
I've read somewhere that miso can help the body recover from illness by providing essential bacteria that the body needs. I'd also suggest bananas or something else with a lot of potassium.

Also, if you can grab yourself a copy of the latest issue of Vegetarian Times, I did make that lentil glop for the "finger sandwiches" and it was scrumptious. I don't think it would keep well for more than two or three days, though, although it was delicious the next day. I don't know what you were planning to put in your veggie lasagna, but I do think a pasta dish containing morningstar crumbles would help out your dad. Also, you can make a grain and bean salad that will keep well for a couple of days. If your parents like curried food, you could try cooking some quinoa, adding some cooked chickpeas and maybe chopped celery and maybe raisins, chopped apricots and slivered almonds, and stirring in some mayo mixed with curry powder. There are all sorts of recipes for stuff like this on the web and it holds up well. Also, ratouille holds up well too.
bean stew is very filling and tasty.
maybe some bean enchiladas too?
pita and hummus wraps?
I like the miso idea.
And keep in mind that surgery and anesthesia can really disrupt the digestive system, so simple foods might be best at first.
How about a noodle casserole? W.W. macaroni noodles, mixed veggies, a can of cream of mushroom soup or a blended package of silken tofu, a splash of lemon juice...

springrolls
spaghetti with veggie meat sauce.
veggie ribs
stuffed tomatoes.
Comfort food-- casseroles, shepherd's pie, Spanish rice, etc.
Don't forget the old standbys of fruit, green salads, and nutritive salads, like tabbouleh. They're easy to eat a bit of when you feel like it and save for later-- and they make you feel healthy and robust.
Any patties that can be sandwiched are desirable: falafel, anyone?

I freeze leftover pasta all the time and never have a problem with it being disgusting.
