Grammy Cooks Banana Bread

This recipe has received a lot of positive reviews and I suck badly at baking so I want to do this correctly! The recipe calls for 2 tablespoons of flaxseed ground. I don't have flaxseed so what can I use as a replacer, a banana? cornstarch? Then it calls for 2 tablespoons of cornmeal. Would it be okay to replace the cornmeal with more white flour? it also calls for cane juice. Will raw sugar replace this? And finally, (sorry!) it calls for a half cup of water. Can I use some soy milk and some water instead? Anyone who has made this recipe and can help me with my problems will get a gold star ;) Maybe I'll even throw in a piece of the bread :P I am looking for a fluffy, moist bread; nothing spongy

i have made this bread soooo many times and its so deliciously wonderful. i NEVER used the flaxseed and cannot imagine the bread missing anything in regards to flavor cause of its absence. cornmeal is essential because i believe it gives the bread texture and would be kinda 'too smooth and possibly gooey without it.' you can use raw sugar but i am a texture girl and i think that ading raw sugar along with the cornmeal may make it a bit too overwhelming. i use regular pure cane sugar- not cane juice. i use soy milk instead of water. other than that, its really good. i do bake it for longer. i just cook it until its done cause the time they suggested left my bread mushy the first time. i put it back for, i think, about 20 more minutes and it was good to go. i suppose it depends on your oven.

Thanks for your response! I use the Florida Crystals. I am not sure if this is cane sugar or raw sugar. But I use it whenever I bake so I guess it will be okay. Can you detect the cornmeal taste? I am so excited to make this but I am so nervous because I can never do anything right when i bake! I think I will decrease the amount of sugar since my bananas are really soft and dark. If I use 3 bananas, do I need to add less oil since it will be stickier? I'm just gonna have to stop asking questions and just do it! I'll update you when I finish!
