Halloween Cookies

My roommate always makes cut out sugar cookies for Halloween and Christmas. They're REALLY good and it's going to hurt to miss out on them. So I was wondering if anyone had a recipe for a vegan substitute. I need to be able to roll out the dough and use cookie cutters. I don't want to be left out!!Help! :'(

You can also try AshleyKimball's "Amazing Shortbread Cookies." I'd rather have sugar cookies myself, but they're quite shape-able.
If you have your roomate's recipe and can type it up here, it'd be easy to sub it out for you.
Sugar cookies are usually fairly simple: I'd just replace the sugar with organic sugar and the butter with earth balence.
I don't recall the last sugar cookie recipe I made, calling for any eggs.
I haven't made them for years, but used to use this recipe. It is adapted from my mother's. I thought they were tasty and fed them to nonvegans...no one seemed to know the difference. :)
Traditional Sugar Cookies
3/4 cup margarine (I use earth balance)
1 cup sugar
2 ener-g "eggs"
1 tsp salt
1 tsp vanilla extract or 1/2 tsp lemon extract
2.5 cups flour
1 tsp baking powder
Combine margarine and sugar with a fork until creamy/fluffy. Add "eggs" and vanilla or lemon extract. Separately, combine dry ingredients. Blend into wet ingredients 1/2 cup at a time. Cover and chill in the fridge for at least one hour.
Preheat oven to 400F. On a lightly floured surface, roll dough out 1/8 inch thick. Cut into desired shapes. With a spatula, move cookies to a cookie sheet that has been greased or covered with parchment paper. Bake 6-8 minutes or golden.
If you'd like, you can put sprinkles on them just before baking.

I'd have a hard time navigating the rice flour/tapioca flour/xanthan gum in the other recipe myself (never used any of them before, and i only know where to buy one!)

YES! I want to make those too... but I have no almonds. I was thinking of replacing the "fingernail" with raw cashews (would make it more like claws...) because I have those.
Everyone I've shown those pictures to think they're too creepy to eat. (so you know it's the perfect Halloween food)

I made 'finger' cookies years ago. My advice is to make them tiny in height & width. They will double with typical cookie spread. Though those molded cookies look awesome but the advice is to make them thin there as well.

I'm thinking of adding maybe a teeny bit of blue food coloring to half the batch to see if they'll look more "dead." :D

I'll try to remember to take a picture of them! I don't have a digital camera though, so it might take me a week or so to get them developed and scanned--what a hassel! But I will post them!!!
